For the fries
3 medium potatoes, peeled
2tbsp cornflour
Salt and pepper
1tsp Garlic powder (optional)
2tsp paprika (optional)
Milk (as needed, tsp at a time)
Oil for frying
To serve ideas
Paprika to dust
Sriracha & sesame seeds
Lemon pepper mayo with spring onions
Cheese sauce (see below)
For the cheese sauce (will make a fair amount!)
50g Butter
4tbsp Flour
500ml Milk
125g Cheese (your choice)
1tsp Paprika (optional)

Use potato starch, not corn starch!
The dough without dairy holds together well enough to be shaped by hand - you can cut it into strips like you did with the first one, roll into straws or use a silicone ice stick mould to get a better shape.
Also, if you don't want to fry all that dough, add one egg, roll the dough into walnut sized balls, press each down with your thumb to slightly flatten them and make a shallow indent, drop into a pot of boiling salty water, wait until they float and cook for 2-3 minutes and voilà, you have gumiklyjzy (kluski śląskie - Silesian dumplings) that go great with a stew or roast (the thumb prints turn into gravy pools, YUM).
Personally, I love chicken and dumplings. I have been toying with the idea of using potato dumplings in my next batch. What do you think about using the Silesian dumplings in the chicken and dumplings dish?
"Use potato starch, not corn starch!" these two ingredients are virtually identical once cooked into a dish. use whatever you have, there is no reason to go buy the other one for individual recipes.
@@FredCowgill They're primarily meant to be eaten as a side dish for a stew or roast (the thumb print is for sauce/gravy), or used in a similar way as gnocchi.
I'm not sure they will survive cooking in a soup, but if you prepare a creamy chicken stew separately and pour it over the Silesian dumplings, it will work well.
I love them with a mushroom sauce!

In the Netherlands we have "RAS patat" which is basically fried potatomash like this but less thick. Look it up! It's delicious.

When making a cheese sauce, add a teaspoon of whole grain mustard - mustard and cheese have a great affinity for one another, but here, you can't taste the mustard, but it does make the cheese taste 'cheesier'.
Dutch RAS patat is very similar. Usually not that long because they use a dispenser for that so they could make it as long as u want.

I think these types of fries are ones that would benefit the most from a double fry. Once to give them rigidity and twice for that real crunch.
I would totally eat an order of those with some the cheese sauce or kewpie mayo.

Looks a lot like a XL version of 'Ras patat'. Ras is a brand name I believe, patat means fries in Dutch. It's mash thinly piped directly into the oil.

I’d love to see you make homemade kewpie mayo! It’s a game changer Asian mayo, but it’s so expensive.
Visit your nearest Polish shop or the Polish section in the world food aisle in your supermarket and get Winiary Dekoracyjny mayo - it tastes similar to Kewpie but is much cheaper.

I have the little churro making gun that you load the dough in and it pipes it out like a caulk gun. It leaves hole in the middle. I bet you use that and then pipe sauce into the middle after. Long fries with ketchup in the middle... yum. Or pipe sourcream, butter, and chives... loaded baked potato long fries.
Now there's an idea worth exploring!
Mayo, BBQ sauce, curry sauce, ...
As an alternative could use one of those biscuit/fondant guns - usually no hole in te middle but a lot of funky shapes.

I was having a very special sort of fries while watching this video, very popular in The Netherlands. It's called "Kapsalon". You should look it up Barry. Might be something you want to try ;)
soup! potato water! great soup base. Have you thought of using a fish poaching long pan or even a 1/4 sheet steel pan, (33 x 23 x 5 cm), for doing the long item cooks? for those unusual fries?
I do that with the skins ever time I peel a potato, I usually wash the potato first, then peel into a salted water brine and let sit for a few. Then dry off and deep-fry
Potato peels in the Air fryer are awesome! Just a little oil and flaky salt, satisfies that craving for fries.
I make potatoe peal crisps in the oven all the time when i have used potatoes. Zero waste, free snacks
These take me back about 26 years 😅 I used to get "RAS Patat" after a day at the stable. I'm very sad they aren't as easily available now in the Netherlands as then 😢
We also have these in the Netherlands, they are called raspatat
This is the first time I've seen a cheese sauce made just dumping the milk in. Usually it's a little at a time until it it smooth, then the rest
Love the content but a word of advice with using that cooking spray. It isn’t advised to use it in an airfyer because it has quite a low smoke point and the lecithin in it will eventually build up a residue and be almost impossible to remove from the air fryer. You’re better off just putting cooking oil in a spray bottle

When i was a kid i used to watch a lot of cooking shows, and a chef that's pretty popular here used the peel of the potatoes and throw them in the oven with a lot of spices (and a lot of paprika) and they looked delicious... I just remembered that! They look good but for some reason i don't risk to do it...
Speaking of butter, have you tried making compound butter? Guga foods does a good compound butter.

You don't need to add flour, the corn (or even better - potato) starch keeps the dough together well enough.

Those air-fried potato-peelings look like they'd make for an amazing low-cost bar-snack. And also a bit like pot-pourri, but actually edible pot-pourri.
Come to think of it, that little trick could be a delicious way to save money and prevent food-wastage by making the absolute most of a potato.
I did it once before we had to fry them cold otherwise they spreaded out

I have lived in Japan for over 20 years and not even ONCE have I seen fries that long. People name stuff in the most spurious way, seriously.

for me, its one of these recipes I admire, that look super tasty.. but no, I dont think I would ever do them myself.

If you don't want to dry it, try making Silesian dumplings: add one egg to the dough, roll it into walnut sized balls, then press with your thumb to slightly flatten them down and create a small indent. Drop a batch in a pot of boiling salty water, wait until they float and take out after 2-3 minutes.
Serve with a stew or roast - the indents turn into little sauce/gravy pools, yum!
They freeze well (can be frozen raw or cooked) and you can heat them up the same way they were cooked or in a microwave.

I steam potatoes - it's less messy than boiling and doesn't take as long 😃
and I'd have put a shedload of garlic granules in the cheese sauce along with the smoked paprika.
