    My meals with KJ York’s Challenge Today:
    1st meal - A Fuel-Pull Meal

    FP - Tanya Mackey's FP Pancakes (subbed out the ground oatmeal for oat fiber, and added in some egg white powder for even more protein in my meal) - web.archive.org/web/201906031...
    I topped the pancakes w/ stevia-sweetened protein-enhanced 0% fat Greek yogurt & a homemade stevia sweetened gluccie-thickened cranberry sauce.

    2nd meal: An E-Meal
    E - Quinoa w/ shrimp - very plain...just squeezed lemon juice over frozen shrimp that boiled after coming home from my Trader Joe's shopping trip today; I salted both the quinoa and the shrimp, but that's about all the fuss that I went to.
    To cook a light and fluffy NON-STICKY quinoa, I soaked it in water, with enough to cover it - it sat in my Instant Pot liner overnight. In the morning I poured off that water, added fresh water, poured that off, added fresh water again and poured THAT off…leaving just enough water to barely cover the quinoa. I put on the Instant Pot lid, sealed it for pressure cooking, cooked it for one minute, and waited for pressure to naturally release. When all the pressure was gone, I had nice fluffy quinoa to use. I will freeze some portions in baggies, flattened for easy thawing.
    FP - Fruity Nogurt, THMC p. 343, topped with some frozen strawberries that I thawed and chopped up thawed.     NOTE:
    I did NOT end up eating the Farro Salad and the Kale Salad that are both crossed out in my photo...after I set them out as part of my meal they just did not appeal to me...and I was plenty filled up without them.
