EAST INDIA No 2 COCKTAIL RECIPE
2 oz Cognac
0.5 oz Dry Curaçao
0.5 oz Fresh pineapple juice
1 Teaspoon Pineapple gum syrup
2 Dashes Angostura
Last but not least is the Phoenix Margarita, a Truffles on The Rocks original cocktail that's a playful riff on the Tommy's Margarita. Made with Mezcal, pineapple gum syrup, lime juice, Padron peppers, and smoked sweet paprika, this drink is smoky, spicy, and totally unique.
PHOENIX MARGARITA COCKTAIL RECIPE
2 oz Mezcal
1 oz Pineapple gum syrup
1 oz Fresh lime juice
1 Padron pepper without the stem and seeds (or 2 slices of sweet green pepper)
3 Drops of 10% saline solution
Smoked sweet paprika for the garnish

What brand of Gum Arabic did you use to make the syrup?
What can I use if Pisco isn't available?
@@scottjohn4246 well you’re out of luck on this one because Pisco is pretty unique. No other spirit will make something similar really. That said, you can use an unaged brandy if you find one. That would be your closer bet. That said, you can make the Pisco punch with light rum and while it will not be the same drink anymore, it will still be delicious. Cheers

Just gave the East Indian number to a try, but was not able to have pineapple gum syrup. I can definitely tell it would be a better cocktail if I was able to add it. But it was great nonetheless
