  • Here in Canada, winter this year just seemed to kick the crap out of us. It's almost the end of May and the sun is just starting to poke it's head out on a daily basis. (I'm really playing into the Canadian stereotype here aren't I?) So in celebration of that, I need to do something tropical. Let's make some Pineapple Syrup. Pineapples are so good for you, and this syrup doesn't require any cooking!

      I worked in two grocery stores as a produce clerk, and no - you don't have to sniff the bottom, but you do need to smell the fruit. It should smell sweet and floral, and have little to no green on the bottom. You can also pluck a frond, and if it plucks easily, it's ripe.

      Since it’s a syrup doused in sugar, being a little underripe may actually be preferable!

      @@unorthodoxromance254 Yep you pick a leaf or frond - the easier it comes out the riper the fruit.
      My family use to grow the fruit - there are a variety of pineapples and some are sweeter than others. My mum will wax on about the Gregory pineapples for hours.... lol
      I use to make my pineapple syrup by simmering the skins (with some fruit pulp) and the cores and used the flesh in my toasted coconut and pineapple ice cream. (it is amazing if you BBQ it... cover it in dark rum and set it on FIRE... lol)

    I've been binge watching these fruit syrup series and LOVE IT! Your personality is awesome. I do have a question . . . Can I make any of the syrups from frozen fruits or from the pulp? Making several of these next month for a breakfast bunch .

      You certainly can make these syrups with frozen fruit. Frozen fruit can be a good choice sometimes because it's picked at the peak of ripeness and flash-frozen. Another good thing about frozen fruit is, it's already prepped for you. Happy you're enjoying the show. Cheers!

    i tried this but i used 3 cups of white sugar and 1 cup of brown sugar.
    it tasted sweet ,and i then put it on my stove and on low heat i added a splash of lemon juice and it was excellent!
    i scooped out the chunks of pineapple and i only juiced half and kept the rest in a jar for sweet garnish on tooth picks.
    1 trick i did different was i removed the core of the pineapple because it had a weird taste that would have damaged my syrup!

    Cake batter: you can used spent fruit pulp for baking to flavor and add texture to baked goods.
    Wouldn't Everclear be a better option as a preservative? Adds next to no water and a lot more ethanol.

      Great suggestion on using up the fruit pulp in cake batter. Everclear would definitely work as an effective preservative but a 40% or 80 proof spirit works just as well. Honestly, it isn't even necessary because this syrup will be long gone before it spoils. It's that tasty. Cheers!

    this method of macerating the fruit and not cooking it works well with almost every fruit. i do it with everything from strawberries to muscadine grapes. a ratio of 2:1:1 fruit:sugar:water with the water and sugar changeable depending of fruit.

    This is really fascinating because I never heard of a no cook syrup. How many more no cook syrups are there?

      A no bake lemon syrup comes to mind. I don’t mind cooking them though, a little effort goes a long way in your cocktail.

      I make all my simple syrups without cooking. Generally, I make rich syrup (2 sugar to 1 water) using half demerara and half plan white granulated. However, this method works for all types of sugar and ratios.
      Take sugar and add to a blender (I use a nutribullet since it's very high speed). Blend sugar dry to get it as fine as possible. Then add water and blend the hell out of it until it's incorporated. It comes out just as smooth as cooked syrup and is super easy.

    Bruce, please replace your stone cutting board with a wooden cutting board. Every time your knife touches the stone, it gets dulled.

    How long would this syrup last without the vodka? Would reducing it make it last longer?

      Without the vodka you’re looking at about 2 weeks. Reducing won’t make a difference in longevity. What it will do is make a more intense flavoured syrup. With vodka it should last you about 6 weeks.

      There are lots of cocktails that can be made with pineapple syrup. It pairs well with rum, vodka, whisk(e)y, tequila and gin. Try making a pineapple Margarita, or a pineapple Tom Collins. How about a pineapple whisk(e)y sour? Favour pairings to consider might include apricot, ginger, grapefruit, mango, orange, strawberry, and of course coconut.

      It could last up to a couple months if you preserve it with a little booze but it’s so good it you’ll finish it off quick Try it!

      I've never tried making sponge cake with my pineapple syrup. I would imagine it would work well because my syrup isn't that thick. You might have to adjust the sugar in the recipe you're using as pineapple sponge cake is often made with unsweetened pineapple juice. I think it would make a great frosting.     10:10 Don't ever underrate this protip. I have nothing to do with cocktails in the first place, but in IT for instance, it also works wonders when you're in a pickle with some people that did not hear about you yet. The worst you can get is "Well, it's his first day so that's not too shabby". The best thing you can get is "Wow, and he can do THAT on his FIRST DAY? What a talented guy!"
    And there is a ton of situations in every field where it's useful.

      Dan Man I make one by tossing 1 or 2 sticks of cinnamon into simple syrup as I bring it to a light simmer, place a lid on it, turn the heat off and let it steep for 4 hours or more depending on intensity required. Take the sticks out and bottle.
