  • So I tried to recreate Chicken Joy.
    It was close! I just didnt get the skin bumps that the original has. But the flavour was pretty good.
    For 8 pcs of chicken
    1 cup cornstarch
    1 cup flour
    1 tsp salt
    2 tbsp garlic powder
    1 tbsp onion powder
    2 tbsp five spice
    Mix all and use as coating.
    Deep fry in 50/50 canola and coconut oil
    Gravy
    1 organic stock cube
    3 cups of water
    2 tbsp of flour mixture
    1/3 cup milk

    I used to work at Jollibee as fry man during my college days. Before we throw the chicken into the breading mix, we dip the chicken first in iced cold water about 1-2 secs so the breading would stick nicely to the chicken.

    Part of my humble beginnings is I used to work in Jolibee as the guy that fries those world famous Chicken Joy. Balancing work and studies since we weren't well off. Anyway, I think the only thing you missed here is the batter which makes Chicken Joy's meat moist and its skin crispy. Jolibee's breading was a simple mix of constartch, flour and salt. It was palm oil indeed. But the cooking time was critical, Jolibee used a Henny Penny deep fryer set to 120, for leg parts it's timed to cook for 14mins, thigh parts 12mins, breasts wings
    11mins and breasts was 9mins. That gravy was powder (its ingredients remains a mystery to me to this day). Thanks to this vlog entry, kinda made me feel nostalgic and remember my beginnings.

    I worked as a fryman right after high school. Chicken parts are marinated by commisary. Wet brining was probably done because it taste salty even when its raw. (Tinikman ko out of curiosity but we are really forbid to do it). Akala ng iba na hindi marinated kc walang visible traces ng kahit ano. The coating will just complement the wet brining kasi you have to dip it with ice cold water for 2 seconds pra mabawasan ang alat sa surface and para lumutong ang balat due to chemical reaction ng high boiling temp ng palm oil at ang ever dependable na henny frier. Tapos ang wet brining will keep its meat as juicylicious as possible. Hope this will help your home made chicken joy.

    Sprinkle some water into breading and mix it until you get flaky clumps that'll stick to the chicken. That's how you get those crispy bumps on the skin. It's something that naturally happens as you dredge a lot of chicken in the same big batch of breading so that the moisture from the chicken starts making clumps in the flour. Doing it with the water sprinkle just makes it happen from the start.

    Hi Erwan! You got it right to use 5-spice powder as Jollibee uses that for Chickenjoy. Also good with using flour and cornstarch for dredging. I also like that you used organic broth. What I am looking forward is if you can probably set your oil be heated up to only 160 to 190 degrees Celsius to really make the chicken be cooked better. Additionally, I suggest using a rack instead of towel as the crispiness of the chicken decreases and it may make the chicken soggy due to oil.

    chickenjoy are already marinated when it is delivered to every jollibee branch. then it just has to be thawed and dip in water for 1-2 seconds and then into the breading. jollibee uses a pressure fryer, and that what makes it really crispy on the outside and tender and juicy on the inside 😊

      Kamote Tops parang sa vid lang. dipping is done 1-2 seconds to moisten the chicken then pressed 4x in the breading and then fried for 11-12 mins.

    I used to be a Fryman at the Jolibee but the only thing that makes the chicken tastes better is the breading and the control of heat of your oil. That makes their chicken so delicious. And also they have something that is added on the oil that makes the oil preserved in longer frying and binds with the flavor to the chicken.

    I recommend that you replace your flour with pancake mix. The pancake mix gives the chicken a crispier texture and a hint of sweetness

    Hey man I hope you read this. I worked for Jollibee years ago as a Fry-man. The secret for its texture is that you have to soak the chicken into the water first before you put on the breading. Hope you try it. Anyway, good job w/ the taste.

    I've been to a Jollibee factory. Calibrated some of their machines. I saw chicken joys already coated or marinated on some point on the factory and just being ready to cook on the chain. Also spag sauce and palabok and everything thats have sarsa, is factory made. So I dont eventually believe some of the comments that its on the fry man or something etc

    i was an all around kitchen crew in jollibee,as a fry man we dip the chicken in ice cold water then drain it in before putting it in the pan full of breading mix,this is for proper adhesion of the breading,the chicken is already marinated from the commissary and its already flavorful even without the breading,the gravy is in powdered form,i thought erwan is goin to imitate the exact taste of jollibee chicken joy and gravy😁

    My theory
    The chicken is marinated in brine first
    The breading has chicken powder as to make it tasty..knorr has chicken powder for sale
    I read a comment that they submerge the chicken in ice cold water which helps in the chicken having a crispy exterior and a juicy interior as the the cold would prevent the insides from getting dry

    The Secret to the best brown gravy is to keep the rue (the sludge from the bottom of your deep fryer for the next gravy It is what was done to make Kentucky Fried Chicken which is a place with about the same reputation in the States. The other thing is if you take a little of your stock and finely drip it in your breading the little lumps of breading will give you the ridges

    Jollibee seems to be more like southern style (US) fried chicken. You did say that they probably brine it which explains the deep flavor. Milk (or preferably, buttermilk) would make a great wash but you may have to double wash and double coat with breading. I know, not the healthiest of options but I don't think you were thinking of making a healthy fried chicken to begin with. Looked great though. 👌

    I used to worked in a jollibee as a fryman and i will disclose some of the cooking procedures of chickenjoy. the cooking temperature is 350 degrees fahrenheit or 176 celcius. Cooking time for thawed temp 16 mins and 19 to unthawed and while breading make it sure the chicken parts is completely adheres wiith the breading powder. But there is even more than that, why chickenjoy taste juicylious, its because the chicken is marinated and they produce breading powder mix by itd own

      Jollibee doesn't double fry their chicken joy, they dip it in water then batter. That's the thing that makes it crispy :)

      The chickens in fastfoods are precooked and then marinated in special ingredients while transporting to deffirent jolllibee stores location and when it arrived they sorted it batches and cover it with crumbs before cooking.....

    Sir Erwin, suggestion, try to marinate the chicken with butter mix for at least 1hr then dip it to chicken breading and then dip it in water (not too long, just make the breading sip a little of water) and then dip it again in breading, that will make the skin puff once you fried it. I tried it and it almost the same like jollibee chicken joy. Sorry for my bad english... I just love cooking... hehe

    Secret to the JCJ and all other fast food chain fried is the starch. As you can see, the homemade version is fairly smooth, while the CJ, KFC and McDo crispy fried chicken is very craggy which increases the crunch. Not sure if they use a batter mix first before the breading, but that could be the case. Erwan’s use of cornstarch & flour is a pretty good approach, but the chains use modified starches supplied by multinational companies that have scientists who study the properties of different starches, then create proprietary blends for the chains. Also our local fried chicken is full of salt & MSG, that’s why KFC here is tastier than most KFCs abroad, which most pinoys would find bland. There are fried chicken mixes sold in the groceries. Those may be closer to the craggy texture of the chains, but I haven’t really tried those yet.

    My great grandmother told me that the secret of achieving crispy friedchicken is that you need to follow the "dry-wet-dry" method. First coat the chicken into the breading mix then into the egg then back to the breading mix. It's indeed effective , I Tried it already..

    Be careful in handling raw chicken to prevent the spread of Salmonella like take some of the flour mixture first to make the sauce before dipping the raw chicken to prevent cross contamination. Since you're a restaurant owner cleanliness in handling food should be a priority. You should know better.Thanks.

    Our chef fillipina mother know how to make chicken adobo with comparrado rice sauce, just mix with already cut small little piece of the probably green celery vegetable and colorful yellow tropical fruity lemon, especially that already cut in half already.
