  • I would like to introduce you to one of my favorite dishes: pork sausages in tomato sauce! Sooo tasty, soooo flavorsome, sooo mouthwatering... although slightly fatty dish :-)
    I love this recipe because effectively we can create an amazing tomato sauce base that you can use also for some pasta: you kill two birds with one stone!
    I will show you how to cook these Italian pork sausages in an ocean of tomato sauce: get ready with some freshly grilled bread to be dipped in the sauce - what's a sausage-base tomato sauce worthy anyway if you don't do a nice "scarpetta" in there?

    Pork Sausages in Tomato Sauce - RECIPE
    Prep Time: 5 mins
    Cook Time: 120 mins
    Complexity: Easy
    Ingredients (4 people):
    - 8 pork sausages
    - 780gr Tomato Passata
    - 1 onion
    - 1 glass of white wine
    - basil
    - salt and pepper
    - extra-virgin olive oil
    Procedure:
    1. Start by chop the onion finely and let it sweat in abundant olive oil;
    2. Add the sausages in there and let them cook 3-4 minutes each side;
    3. It's time to add the glass of white wine - let it evaporate;
    4. Now add the passata, turn the heat at the minimum, put the lid on and let everything cook for at least 1/1.5 hours;
    5. Make sure that you remove the lid for the last 20 minutes of cooking;
    6. Add a few basil leaves, salt and pepper to your taste;
    7. Serve and ENJOY!

      Of course you could do also that way. Some people even boil the sausages and get rid of the water (and they repeat the process for a couple of times): this reduces the fat from the sausages.
      It depends what you want to achieve. I cook everything in one pot because I want all the flavours to mix - it does make the dish a bit "heavier" but, hey, this is not a meal for the diet!!!

    Hmmm, no recipes for quite a while? I read somewhere some Italians don’t add onion and garlic to tomato sauce. There is no garlic in this recipe. I poke holes in my sausages to avoid bursting the sausages.

      You're right, has been a while! My daughter keeps nudging me too, so maybe we'll do one new video soon...
      As per the onion and garlic, I do use onion to make the "soffritto", but not a big fan of garlic.
      In general, in Italy we don't use garlic as liberally as you see it in "Italian food" abroad.

    What temperature do you fry the onions? Medium?

    Not sure about the poking part..... Dont they become dry

      Not really. It just makes it easier to cook inside. I understand your question and potentially you could avoid poking it to retain the juices.
