Pasta with anchovies and parsley! (READY IN 15 MINUTES)
Are you ready for a pasta with anchovies and parsley that will blow your mind? This is a recipe from Calabria, popular in Sicily as well, that combines the strong taste of the anchovies with parsley, pinenuts and - of course - the tomato!
It only takes 15 minutes to cook this phenomenal dish that it's so tasty you won't believe it.

Pasta with anchovies and parsley - RECIPE
Prep Time: 15 mins
Cook Time: 10 mins
Complexity: Easy
Ingredients (4 people):
- 400gr bucatini (or spaghetti, linguine, etc)
- 50gr pinenuts
- 10 anchovies
- parsley
- 680gr tomato passata
- 1/2 red onion
- garlic
- 80gr breadcrumbs
Procedure:
1. Finely chop the parsley, the garlic, the pinenuts and a few anchovies;
2. In a pan, pour some extra-virgin olive oil and a couple of anchovies until they dissolve, then gently fry some finely chopped red onion;
3. Add the tomato passata and then the chopped parsley and the rest of the ingredients;
4. While the sauce is cooking, toast some breadcrumbs with oil and one anchovy;
5. It's time to cook the pasta! Once it's very al dente, add it to the sauce and keep cooking with some starchy cooking water
6. When you are happy with the cooking of the pasta, it's time to serve!
7. ENJOY!

    I make seafood pasta dishes all the time. Similar to yours. I live in southern Florida and go fishing every week. One of my favorites to catch is Mahi Mahi. Great on the grill or broiled and in a light tomato sauce with pasta. Your pan has a hump in the middle causing the oil to fill the sides of the pan and leave the middle dry. I would use a rubber mallet to tap the bottom when needed to flatten it out. This happens to all thin bottom aluminum or steel pans. I’ve since replaced them with thicker bottom sauté pans (stainless steel with copper filled bottoms) which eliminates the problem. It also makes for a more even heat distribution and heat retention.     Hmmm, no recipes for quite a while? I read somewhere some Italians don’t add onion and garlic to tomato sauce. There is no garlic in this recipe. I poke holes in my sausages to avoid bursting the sausages.

      You're right, has been a while! My daughter keeps nudging me too, so maybe we'll do one new video soon... As per the onion and garlic, I do use onion to make the "soffritto", but not a big fan of garlic. In general, in Italy we don't use garlic as liberally as you see it in "Italian food" abroad.

    This recipe was really good. I did it with Pork and loved the flavor of the seasoning. The meat and bell pepper were overcooked after 1 hour in the oven, so check on it early.

    I always use dried Shitake Mushrooms with Chicken Stalk, turns out the best. Italian food is the easiest to cook. You just have to do it correctly. Otherwise, it's very easy to mess it up.

    I want to cook the eggs to never have to worry about any discomfort or salmonella problems... but I also want to use the egg whites. For that I would usually cook the egg yolks slowly on a double boiler and then mix them in with the mascarpone. Can I just cook the yolk and the whites together that way? Or what should I do?

      "Bagno maria" - basically "cook" them on steam. You definitely shouldn't cook the yolk separately in my opinion
