  • How to Roast Boneless Pork Belly
    Perfect Crackling Skin
    ( Letson Pork Belly )
    INGREDIENTS
    2.5 kg pork belly slab, skin on
    3 whole white onion, peeled and roughly chopped
    1/2 cup Bay leaves, washed
    2 green onions,
    1 tbsp lemongrass powder
    1 tbsp Granulated garlic
    1 tbsp Granulated Onion
    1 tbsp Brown Sugar
    2 Celery stalk
    Sea salt, plus more for an even rub around the pork
    2 tablespoons whole black pepper
    Lechon is a roasted whole pig slowly cooked over charcoal heat. The crispiness of its skin is one of the best features of roasted pig but the flavor and aroma is distinctive for every region or country. My Lechon belly is known for their spices and herbs particularly the combination of lemon grass powder , celery , salt, pepper, and granulated garlic and granulated onion as stuffing inside the pig's belly. Flavor is develop during cooking.

    FOR BRINING
    I just made a brine
    If you wanna use water here is the ratio
    1/2 cup kosher salt
    1/2 cup sugar
    4cups water
    4cups ice water
    You can use apple brining too
    For the Brine;
    350g of soft brown sugar
    400g of good quality coarse sea salt (I use Maldon Sea Salt for this)
    5 pc chopped green apple
    12 cloves garlic
    12 black peppercorns
    3 dried bay leaves
    8 Cups of water
    Brine for 2 hours

      Pwedeng apple juice pero kung alangan ka just use water and salt for brining, up and down ang apoy if possible but if not you can use nman upper one pero every 30 minutes ikot mo sya para maging maganda ang distribution ng init sa balat

      A reason for high temperature to start roasting is to brown the outside of the pork belly at the same time to dry up the outside layer para maging crispy pa sya lalo then slow roast na sya along the way para di magdry mman ang meat nya so 30 minutes before sya matapos sa cooking time need to bring back to the high temperature para mapacrispy pa sya lalo na hindi sunog ang letson 😊

    Hi. What could be the reason po na yung skin is naging bubbly po instead na smooth? although crispy din naman po, yun lang super bubbly. trying to have the same texture of skin po sana same ng naluto nyo which is smooth. Sana po mareplyan. :) Thank you!
