Ricky講煮講食 懶人版肉醬意粉 公開私密秘方 16分鐘便做好 Spaghetti Bolognese secret recipe made easy

- 「這個港版式肉醬意粉,跟意大利人的做法差不多,但時間縮短了很多,只需要十六分鐘便完成。 如果是意大利的傳統肉醬,隨時要花三四小時。」名廚Ricky笑說。
這個食譜的材料除了免治牛肉、洋蔥、蒜頭,另外有車厘蕃茄、意大利粉醬汁、茄膏及羅勒。他強調要用車厘蕃茄,因為車厘蕃茄的味道比大蕃茄更加濃稠,所以用來煮肉醬,蕃茄味更濃稠和香甜。
他說做肉醬,千萬不用心急。「如果你把鍋熱到出煙,跟著放洋蔥和蒜頭下去,它還未熟已經焦了,跟慢慢炒出來的味道是不一樣的。當洋蔥開始透明和軟身,同時嗅到蒜頭的味道,便可以將牛肉、車厘蕃茄、意大利粉醬和茄一起去炒。」跟著再加入羅勒、即磨的檸檬皮及調味便大功告成。
最後他還有一個秘訣,便是在醬汁裡加入牛油,因為當醬汁裡面的水份,給牛油乳化之後,更可以令醬汁的骨幹更有力,味道更滋味。
肉醬意粉
Spaghetti Alla Bolognese
材料(Ingredients) :
免治牛肉 250克
Minced beef 250g
洋蔥 200克
Onion 200g
蒜頭 30-40克
Garlic 30-40g
車厘蕃茄 200克
Cherry tomato 200g
意大利粉醬汁 250克
Pasta sauce 250g
茄膏 40克
Tomato paste 40g
羅勒 10克
Basil 10g
鹽 少許
Pinch of salt
黑胡椒 少許
Black pepper few turn
檸檬 1個
Lemon 1 pc
