You definitely are right about paying my hard earned money for very sub-par food. It is not what's happening today or tomorrow! Thats why you can't take everyone's opinion on what's good to your taste!
If a restaurant does not have a good volume of people dining inside or if all of the tables are not full this means the quality the food is probably not good. It’s not up to par.

As a chef we’re not supposed to cook greens that old southern way anymore because it cooks all of the nutrients out. Anybody that has gone to culinary school knows that.

I can immediately look at a soul food plate and tell if it's gonna hit. I knew before he tasted it that it wasn't gonna be good. Presentation is everything.
