    Really fascinating that you held up the crust to the flame to blacken the pie's rim, I'd have never guessed that was an additional step and always assumed it was just the natural property of the wood fired oven at work.

    Welcome back! Just recently made your meatball recipe, it was very good!
    Funny that you'd return with a Neapolitan Pizza vid. I'm currently thinking about getting one of these 500° C pizza gas ovens. I love Pizza but my inner stingy advisor thinks that spending hundreds of €€€ on a single purpose oven is a waste of money...
    But better Pizza...

      I can say we were using 00 flour with a 68 percent hydration. 😊
