Waakye Stew | Tomato Stew Recipe

  • In this video I will show you how I make Waakye stew. This stew is eaten with Waakye, which is a rice and beans dish, but it is not limited to Waayke. This stew can be eat with plain rice, potatoes, spaghetti, yam or plantain.

    Ingredients Beef:
    +/- 500 gr. Beef
    +/- 60 gr. Fresh ginger
    1 Large Onion
    3 Cloves of Garlic
    1 Scotch bonnet
    1/4 cup Water
    2 Magi cubes
    1 Teaspoon Salt
    3/4 Cup Vegetable Oil
    Ingredients Stew:
    2 Large Onions
    80 gr. Ginger
    5- 6 Garlic Cloves
    1 - 2 Scotch bonnets
    1/4 cup Water
    1/2 Cup Vegetable oil
    1/4 Cup Tomato paste (68g)
    2 Tins Canned Tomatoes (400g each)
    1/2 Tablespoon Curry Powder
    2 Magi cubes
    1/2 Teaspoon Salt
    Instructions Beef:
    1. Wash and cut the beef into cubes, put it in a pan and set it aside.
    2. Peel and cut the ginger and put it in a blender along with the onion, garlic cloves, scotch bonnet and 1/4 cup of water and blend until smooth (add more water if it doesn’t blend well).
    4. Add the blended spices to the meat, add magi cube and salt and mix it.
    5. Cook the meat, together with the spices and with the lid on the pan, on a medium fire for about 10-13 minutes.
    7. While the meat is cooling, put the vegetable oil in a another pan and heat it over high/medium fire.
    8. Fry the meat over high/medium fire until it browns.
    9. Remove the meat from the oil, and set it aside.
    Instructions Stew:
    1. In a blender mix the onions, peeled ginger, garlic cloves, the scotch bonnet and water. (Add more water if needed)
    2. In (a different) pan, add the vegetable oil and warm it over a medium fire. Add the blended vegetables to the oil and cook it over a medium fire for about 5 minutes. Stir it occasionally as it is prone to burning.
    3. Add the tomato paste, mix it with the pureed vegetables and cook it for an additional 5-7 minutes.
    4. While its cooking blend the tinned tomatoes with the scotch bonnet until smooth.
    5. Add the blended tomatoes and scotch bonnet to the stew.
    6. Add the curry powder, salt and magi cube. Mix it, taste it and add some more if needed.
    7. Add the fried beef to the stew.
    8. Cook over low to medium fire until its done. This usually takes about 10-15 minutes.

    This is the same way I make my stew except I blend my Maggie cubes with my peppers and onions to cook in the early stages of my stew 👌🏾😀

    This was a great quick and easy method for making waakye stew. IMO it adds flavor to the stew when you don’t clean the pot after frying the meat 🍖.

      In my opinion, ginger is quite important in this dish. Without, it would be a regular stew. You could perhaps substitute it with powdered ginger but it still won't give it the same end result.
