Making a knife (Noodle Cleaver/Menkiri)

  • I made a Japanese inspired noodle cleaver for my friend Ruby, she occasionally does pop up food events and used to run a cafe so hopefully will get lots of good use out of this knife. Check out her instagram rubyjetwhite
    A noodle cleaver is specifically designed for cutting the noodle dough into individual noodles. From my research they all have a single bevel which makes sense as you can keep the flat side of the knife against the dough.
    I ordered a piece of 1095 steel for this knife and knowing it would be a real challenge made sure to order more than I needed incase I needed to redo the knife... and I'm glad I did as I did have to redo it.
    By far one of the hardest knives I've made, not only for the sheer size or the fact that I cracked it and had to make it again but also the grind line straight over that length was a real challenge.
    The woods used for the handle are walnut, Jarrah and some Birch veneer. I used some Rimu and walnut for the Saya.
