I have a lovely Scandinavian hand brush for flour, I use it all the time to even out and brush away excess flour when I do croissants, tortillas, crusts etc, it’s very useful! It’s great to help ensure you don’t roll big uneven lumps of flour into stuff, or get a nice even coating on delicate pastry..I think it’s made by Iris Hantverk..you certainly don’t have to have one, but it’s one of those little things that really puts a professional little touch in your cooking, and once you have gotten used to using it, it feels necessary..

These Sonoran style tortillas are unique in that they are thin, yet sturdy, chewy, yet so soft and tender, totally worthwhile trying to make your own! Just like to share the cool stuff I find out there on the interwebs!
Pro tip: add in a 1/4 teaspoon of caraway seeds and a teaspoon of minced prunes or raisins. The caraway seeds boost the heartiness and beefiness of the stew. The minced prunes/raisins counteract the slight bitterness of the Guinness beer.

What a great recipe! I may try this one when my brother comes to visit. One question, though ... once you fully assemble the pie, can you refrigerate it for a while, until it's needed? This looks like a winner! Ever since your video popped up in my feed, I've been enjoying them. It's way too hot here in New England to even think about turning on the oven, or cooking the meat on the stove for an hour. I have a lovely Scandinavian hand brush for flour, I use it all the time to even out and brush away excess flour when I do croissants, tortillas, crusts etc, it’s very useful! It’s great to help ensure you don’t roll big uneven lumps of flour into stuff, or get a nice even coating on delicate pastry..I think it’s made by Iris Hantverk..you certainly don’t have to have one, but it’s one of those little things that really puts a professional little touch in your cooking, and once you have gotten used to using it, it feels necessary..

@@JohnKirkwoodProFoodHomemade cool technique for novices to make excellent (Sonoran style thin, handkerchief type) burrito sized tortillas at lady and pups, I also found an incredible lady at Hacienda de las Viudas (or something like that) who makes even bigger ones by hand..amazing technique! These Sonoran style tortillas are unique in that they are thin, yet sturdy, chewy, yet so soft and tender, totally worthwhile trying to make your own! Just like to share the cool stuff I find out there on the interwebs!
Pro tip: add in a 1/4 teaspoon of caraway seeds and a teaspoon of minced prunes or raisins.
The caraway seeds boost the heartiness and beefiness of the stew. The minced prunes/raisins counteract the slight bitterness of the Guinness beer.

What a great recipe! I may try this one when my brother comes to visit. One question, though ... once you fully assemble the pie, can you refrigerate it for a while, until it's needed?
