  • If you've got some juice, bread, and a toilet, even in jail you can have a night cap. Luckily, I have slightly more modern facilities, so in this video, I'll teach you how to take some plain old juice and turn it into wine, using stuff you can get at the supermarket.

    I currently have my first ever batch brewing right now. 100% organic grape juice, 1 cup of table sugar, half a packet of red star baking yeast, boiled raisin juice for nutrient, and the tube into water bottle airlock. It took 24 hours for it to start fermenting, but low and behold it's bubbling mad! Your videos have sparked a new hobby for me, just ordered all kinds of goodies for my future brew!     Gotta tell ya, Craig, I got curious about making my own beer at home, and the first guy I found had this whole industrial stainless steel setup of sinks and basins and whatever all throughout his house, and I was like "Well I guess I can't do this."     I have made caveman hard cider a couple of times as an experiment when I lived near a store that sold preservative free apple cider. Your mouth has yeast in it, along with myriad other microbes, so I took a mouthful of cider, sloshed it around and spit it back into the jug. I let the jug sit in a cool place with the cap on loosely to let the pressure out (cool 50s-60sF so the yeast will grow instead of bacteria), and in a week or two I had lightly carbonated, dry, hard cider. I did it once with bread yeast, too, and it cam out the same. I wish I had added more sugar to boost the alcohol.
    I got the idea from the Clan of the Cave Bear series book "Shelters of Stone" where the caveman community winemaker spit into her grape juice to make it stronger. Pretty silly for wine since grape skins have wild yeast on them anyway. Cauim is a drink made from chewing and spitting starchy ingredients. Saliva has amylase enzymes that break starch into sugar.

    I appreciate the many tips you've unveiled that I couldn't find elsewhere. My previous efforts have been thwarted by Murphy's Law with simple temperature and lack of nutrients which were only presented in overly-complicated ways in the other resources I found.     When i was 15 i started brewing in my closet as a hobby, for an airlock i used a condom, unrolled it completely, taped it on and pricked a tiny hole in the tip so the condom would inflate but not burst. Happy brewing people :)

    back in about 2011 I stumbled on this and I got very good at making strong sparkling and non sparkling wine from this. just be weary, on about day 22 your dealing with some pretty hard stuff. I got pretty hammered on this stuff.

    I did a 5 month stint in the Texas prison system. They ferment whatever they could get their hands on. The only thing they could get regularly to ferment was tomato paste. Yes tomato paste. Uggh. Some of those guys would get drunk enough to puke.

      heh heh..yeah I had a couple of inmate friends tell me that back in the 90s (before hi tech cameras, stricter regulations and contractors who now contract to run certain states prison kitchens) that they would get people to somehow smuggle a cup or two of table sugar. and they would let it sit in water for awhile until it dissolved and they would brew that into alcohol. (I'm guessing they would only require a pinch of bread yeast) Must have tasted awefull!

      Yeah, I was in a weird situation in Texas. I spent most of my five months at a prison run by CCA. Texas has their own prison system and it's really difficult to get away with making hooch. But since I was in a CCA prison, we were pretty much free to do whatever we wanted. The prison used to be an air force base so it's set up dormitory style. There were no cameras. Nobody was watching us. I lived on the third floor. We had a look out. We would keep the lights off in the hallway, If the guard was coming, they would turn on the light. So cigarettes, cell phones, K2, marijuana, and tattoos were rampant. I mean rampant! It was a fool proof warning system. The rooms had window unit air conditioners that you could pull out and leave a hole in your wall. Outside there's a ledge that people would put the hooch to ferment. They would steal bags of brown sugar and tomato paste from the kitchen and ferment it. On the 4th of July so many guys got so drunk they had 4 or 5 fights and one of the Mexican gangs almost got in a fight with the Bloods. It was pretty tense for a few days. The guards would put locks on everything. They had locks to certain areas in the dorm. They had locks on certain rooms. But we're in prison. The locks were useless when you have 20 guys that can pick them. So they would pick the locks and ferment the hooch in places no one would look. Hell, they would ferment hooch in the administrators office. They would make it look like cleaning supplies. The amount of contraband was insane.

      jazzartdesign I'm not very proud of it for sure. Then again Texas throws everyone in prison. In the 80's Texas had one prison. By 2010 there were over 110. They asked the federal government for more money to build more prisons. Obama actually did one good thing and told them to get lost and start using the parole board. Some of the sentences they are administering are insane. 25 years for possession of 4 grams of meth? 5 years for repeat offenders for possession of marijuana under an ounce? Meanwhile the guy that lived next to me tried to burn down a school and only got 4 years for arson. I got two years for trying to pass off a fake prescription for 20 hydrocodone. A little excessive if you ask me. Never been in trouble before. But I'm all done now. I'm free and clear. I'll just try to learn from it and move on.

      Yeah Ive heard of how Texas is a pretty tough state on crime. Your right about it being too excessive. I actually do remember hearing about that state and how they were making makeshift outside prisons (like the kind you mention in) But like you said, its much easier to get away with alot of other stuff such as brewing than your average population prison. Still from the sound of those makeshifts prisons..I'd rather have a normal one with cells,camera's,and heat or A.C. (and the more chances of getting caught with the wine paraphernalia)

      I have a question, when making vodka you have to distill it to remove the yeast, potatoes, and methanol but why don't you need to distill wine, shouldn't you die from methanol poisoning?

    I think the idea with the condom, is you poke a very tiny hole in it. This way, even though it is releasing Carbon dioxide, there is still constant outward pressure in the condom which keeps outside air from coming in. If it is ballooned out at all, while having a hole in it; it is impossible for outside air to enter. Am I correct? There may come a time in the fermentation process, where it doesn't go fast enough (the reaction); and contaminants enter the condom. I think.

      Good idea! I dissolve the sugar in water before adding it to the juice. But his idea of getting real nutrient from dried fruits instead of buying nutrient packets - well, it's inspired! Next time I'll save a step add raisins to the boiled water.and sugar, and see how that goes.

    I used this video to make myself some alcohol when this video came out. Made some really good stuff after a few tries.     I just finished tasting my hooch that I made with 100% Cran-Grape juice. It was EXCELLENT. I really didn't expect the great results I got. I followed your recipe to the letter and tried the air-lock and the condom trick. The one with the condom did have a slight rubbery smell to it but there wasn't any rubbery taste. It had a dry wine taste similar to a pinot but obviously a red. Thanks for the video Craig!

    Wow wow wow. I watched this video a couple times last week and then on Sat. went to homebrew store and bought a gallon jug, an air lock, some corn sugar and some fleischman's champaigne years. And some star-san. I picked up a gallon of apple juice and threw everything together. 2 cups of sugar. starting sg was 1.074. 4 days later fermentation had stopped and sg was .998. That's about 10%avv!!. tastes great chilled. Will freeze for a little clarification. Thanks Craig!

    Always wanted to try this, your videos finally pushed me to do it, I got on amazon and bought 2 jugs, 1 Gallon each, sugar, went with dates, and juices I got are orange mango, and grape pomegranate juice, also got distillers yeast, 5 to 7 days gives 18 to 22% alc, wish me luck guys...lol

    Hi Craig, long time fan here. Just wanted to thankyou for getting me into homebrewing, i have done it on and off for the last 14 years. Ive had successes and failures but the hard apple cider i make always turns out good. I just brewed a batch up today actually (hard apple cider) and this time its more for the reason of cheapness.... cider and beer has gone up in price in the UK so i now understand why you homebrewed all these years with Canadian prices over there. I haven't brewed for about 2 years now but i always get the itch again. This time i will be sharing it with work colleagues and hopefully get them brewing themselves once they see how easy it is. I tend to do smaller batches (4lt batch this time) just because i know how much it sucks to get 23 litres of wort ruined....
    I first watched this video when i was about 16 and now i am 30! (known you almost half my life sir!) and i actually started brewing when i was 17.
    Just want to say thankyou for the information over the years and I now use Starsan as my go to sanitiser, works every time and lasts forever!!!
    I actually bought the coopers beer kit a good few years ago, i had one good batch and every batch after that got infected / ruined some how (tried 3 more batches before giving up). I might try a mead soon too as that is easy enough to make any size batch you want. The beer kits are usually 23lt batches so thats too much for me to tip down the drain if it goes wrong but i do love my beer so its a shame.

    Craig, Howdy from Nova Scotia man, your videos are great. This is one of the first videos that I watched before I became a brewer. It is a great way to introduce people to the idea of brewing their own refreshments. I still make this occasionally, with concord grape juice and pure blueberry juice. I then settle it with bentonite and then kill the yeast with Potassium Sorbate a la Steve45ca, makes a fair bottle of wine. Thanks for all the videos Craig, they are well produced, and informative.

    Amazing how easy this was to do myself. Did one batch and have a cranberry/grape on the go. Some fun while my beer batch is going.

    Thanks Craig, been brewing beer for a few years and wanted to experiment with wine. Couldn't justify buying demijohns for what might have been a one off so I adapted your method and started a few batches.

    thanks alot craig! im 23 years old, so no worries here. but i followed your guide 100% complete, and instead of using a condom, i actually just used an un lubed latex glove i sanitized, and just used a hair tie to keep it in place, but i literally just now finished mixing all the stuff in, soo in a couple weeks ill post here and let everyone know how my batch turned out!! happy brewing and thanks again craig!

    Thank you for the raisin thing. I seem to have heard of that somewhere, but it didn't sink in until now. So far, I have had no problems without it, but if I do have any, I will know what is missing.

    Very good, I used to make it back in high school... for my air lock I just used a light plastic sandwich bag over the top with a small rubber band around the neck. Worked fine.... Good luck

    I live in Norway right now and I'm supposed to stay here for a year and a half. Alcohol is pretty much the most expensive thing you can buy here. This method saved my freakin' life.

    Glad I have more modern facility's also.
    My Air lock is a clear plastic s-bend and in my grandfathers home brewing days in the 1970's he would use a plastic rubbish bin and the lid would often blow under pressure. I wonder is a short length of hose in an S-bend and some tape could have worked also :)

    Hey Craig. My girlfriend & I are just getting into home brewing. Your videos have been really helpful. Great work - keep it up. Thought you might be interested to know an Aussie company called OzTops has a $25 kit for just this sort of brewing. Yeast enough to make 75 litres of wine from fruit juices right in the bottle. Also comes with patented reusable lids (2 types; to fit juice bottles & soft drink bottles) with built in airlocks in 3 carbonation strengths. Might want to check it out. Cheers

    Made some of this not too long ago. Of course, being cheap and lazy, I used a balloon for the airlock (there was no rubber taste) and skipped the adding of the fruit. Also used a wine yeast. Worked very well, especially after I did a bit of freeze concentration. Too well maybe, Had a large mason jar one evening, blacked out and couldn't remember a thing.

    i love your video, ive been making wine using this method for just under a year now. only i use welches frozen concentrate, latex gloves work as well as condoms although not as sterile, also the smell of brewing wine this way is sometimes a little offensive, for that i get a plastic bin with a lid(not airtight) maybe about 16 gallons or just big enough for all your bottles and snap the lid on. this also helps keep the temp more constant if your house temp changes between night and day...

      I use balloons too. The 12 inch round ones are great and not as tall as the air locks so the containers fit better on a top closet shelf.

    Followed you instructions to the T didn't have an airlock put a balloon over the bottle poked a small hole in the balloon was done today. Wow that's some good stuff.
