  • Today I want to share with you how to make Japanese curry roux from scratch!
    It's really hot outside, and we want something spicy.
    That's Japanese curry!
    Japanese curry is not too too spicy but just good in spiciness.
    This is highly requested video from those who can't access to the Japanese box curry.
    ・350~400g Curry Roux
    200g lard (or butter, vegetable oil)
    150g onion (one small onion)※
    50g ginger※
    40g garlic※ 
    180g bread flour (or all-purpose flour)
    85g mixed curry powder (or blend to your liking)
    ※save these ingredients for chicken curry

    Thank you. Here on Brazil a box curry is very expensive, with this recipe is possible to make about five or more times the amount of one box by the same price. Love it.

    Tip: Grate some fuji apple and add it into the flour and spice mix for a sweeter taste.
    Question for KPB: Any suggestions on how to reuse the fried onion and garlic? Maybe dry them on kitchen paper and use as toppings for something?

      Vermont Curry has grated apple and cheese in it as well. You could try adding grated gruyere and applesauce to your curry while cooking.

      @@kitchenprincessbamboo their kitchens are covered in ceramic tiles and they use dark colored clay pots and alumunium, or stainless steel tools to cook. Which is much easier to clean. Water and soap is enough

    Awesome! Looks gorgeous, but at the same time, I think I'll prefer to just fry the ginger / onion / garlic and then make the roux every time lol, just so that I can use the vegetables in the same recipe.
    Though processing the ginger / onion / garlic probably yields a delicious, fragrant, maillardy and fatty paste.

    That looked to simple! 😍 I'm a bit embarrassed that I've not looked up a recipe for curry roux before when it turned out to be so easy. I imagined it to be complex but this was way to easy not to do at home! I'll have to do a vegetarian version without lard. I think coconut fat could work I guess?

      Maybe, yes. It's a good vegan substitute! But I can't imagine how onion and coconut fat go together. What do you think?

      @@kitchenprincessbamboo I think that coconut oil is wrong to use because it tastes of coconut, but coconut fat doesn't taste anything. We use it for mixing with chocolate and make a special "ice chocolate" for the Christmas season.

    How many servings from this recipe? The store bought S&B curry - 1 box has 8 blocks, a meal for four uses about 4 blocks.

      Carla Tate Well I think if I lightly spray the trays with some non stick oil, it’ll be easier to pop them out once they’re firm. Not sure how good the trays will release them even with all that fat content.

      I think the brand of Japanese curry powder most restaurants use is called s&b. You could copy their ingredients but they don’t seem to have anything bad, just spices so I don’t really see any point in making it yourself.

    Can you buy lard in the triangle pouch ? I have only seen it in containers, I could probably just use a sandwich bag and snip the end actually.

    I can't remember how much you cun reduce the curry block on how much going in? Like some people are adding the whole thing to one recipe usage, and some people are using like half or even less than half. What's the most you can partition it without reducing it too much? Does someone have a reccomendation on this on how much you can stretch cutting the block?

      If you’re talking tumeric, cumin, etc. they’re usually already included in the curry powder.

    Hello KPB. Your method is interesting. You only use the solids (onions, etc.) to flavour the oil. I cook the solids until just golden, but then blend & integrate them into the final product to keep that veggie fibre in there. What do you think 🤔 ??

    Thank you for sharing this. Would you please explain about why you would want more gluten in the flour to thicken your curry. I thought it was the starch that thickened things, not the protein. Thanks 😁

    Is it just normal curry powder you are using? :) I’ve seen other people make roux cubes, and they used S&B Oriental Curry Powder, which is really expensive in my country. I have to buy it from an online speciality store that sells Japanese products.

      wsa18 I think you need to use the Japanese curry brand. I’ve tried making curry sauce with a regular curry powder from my local supermarket but it tasted nothing like a Japanese curry sauce.

      You need to use an oil that will harden when cools, else it'll difficult to form a block (unless you store in freezer). So lard, butter, coconut oil.. etc.

      The fat of oil should be "solid" at room temperature, if you want it to be blocks.

    Don’t you put any salt in curry roux? I remembered I bought curry block from supermarket that they have already with all flavors.

      We use beef or chicken bouillon before adding curry roux. That’s where the saltines come from. Thanks for the good question!
