This is very Indian version of the cubes coz they're lot of other spices goes into the roux. just 5 spices wouldn't give the same flavour but I guess if you want to make it spicy version that's okay coz Japanese curry isn't hot at all, even the hot version is not hot 😅

Yes you can use without freezing. The reason why we freeze the curry paste so that it can last longer to use.😊

I dont know very much about spices. I wish I did! I am japanese. When my mom makes her curry rice she always put asian curry powder in it along with other spices. Does the combination of your spices equal the curry powder?
you're right that combination is not equal to Japanese curry powder, coz there are lots of spices goes into the curry powder
Ingredients:
1 cup salted butter( if you use unsalted add 1 tsp salt at the end of the recipe)
1/2 Maida/all-purpose flour
1 tbsp chili powder
1 tbsp ginger-garlic powder( You can add onion powder too if you have in the pantry)
1 tsp turmeric
1 tsp black pepper
1 tsp white pepper ( they both have different flavors)
1 tsp garam masala( optional)

How to:
-Soften the butter in a medium saucepan over medium/low heat.
add maida/flour, and stir to combine. Sauté, constantly stirring until the flour turns golden brown. It will take time around 15 minutes till the deep golden brown.
- Add the spice mixture, and stir for 30 sec. add garam masala( optional) It will give extra flavor, So again cook for 30 extra seconds to allow the flavor to mix together.
- Once its don't turn heat and cool down completely.
after cool down add in an ice pad and freeze it once is set place an airtight container in the refrigerator for up to 4 months
