    I like moist meatloaf, especially after it’s been refrigerated. If it’s too dry it becomes too dense and tough.

    I like how Andrew simultaneously subverts the meatloaf with the uninvited-guest ingredient spinach AND gilds the lily with the bacon.

      It's a well used trick of many a parent when their kids go through the hating veggies stage. Hide them, and hide them well!
      I still hide spinach in soups and stews and also add parsley and tell my (now grown) son that it's all parsley because he won't eat spinach. He does, however, love the recipes I hide it in and complains about the flavour being a bit off if I leave it out.
      The mind's a funny thing, as are children - even grown ones.

    What can you use instead of heavy cream -- or any dairy for that matter? I don't eat meat and milk together unless they are cheeseburgers.

    So first Andrew shows contempt for ketchup by emphasizing that he is absolutely not using it for the meatloaf glaze, then he puts ketchup on a meatloaf sandwich. If Andrew were a political donor he would give money to both the Republicans and Democrats in equal measure.

      I don't think he showed contempt for ketchup, the difference in flavour of a tomato paste glaze and a ketchup one is very, very different. Tomato paste when used as a glaze gives a very deep, rich tomato flavour with less caramelisation whereas ketchup, because of it's higher sugar content, is sweeter and caramelises more. Both are nice in my opinion but his nana's recipe called for tomato paste.
      If you choose to use ketchup instead, though, I doubt the sky will fall or it will rain frogs or anything. There may be slight risk that his nana's ghost may visit you and give you a slap across the ear'ole, so be warned! :)
