Fig & Raisin Filled Pork Tenderloin | Barlow BBQ 4K

    Pork tenderloin is a versatile cut that can be done many ways. For our tenderloin, we chose to butterfly it and open it up so we could spread on a homemade brandy fig and raisin filling. Then we roll it up, tie it with some bacon and smoke it on our Weber Jumbo Joe.
    We also try out one of the brand new flavor boosters from Kingsford: Basil, Rosemary, and Sage with oak wood - perfect for our smoked tenderloin!

    ---------------------------------Fig & Raisin Stuffed Pork Tenderloin-------------------------------------------------------------------
    2-3 pound pork tenderloin butterflied
    Filling:
    1cup jumbo raisins
    1/2 cup roughly chopped figs
    1 cup brandy (1 1/2 if you are making cocktails!)
    1/4 cup maple syrup
    2 cloves minced garlic
    1 tbsp minced fresh rosemary
    1/2 cup chopped pecans
    good pinch each salt & pepper
    2 tbsp butter
    Soak fruit in brandy for 2 hours to overnight, put in the microwave for 2 minutes to get things going. Drain and reserve brandy. Saute pecans, garlic and rosemary in butter, add to fruit, mix in maple syrup, salt & pepper.
    Rub:
    2 tbsp pepper
    2 tbsp salt
    2 tbsp bells poultry seasoning
    Shake all over pork, both sides before rolling.
    Brandy glaze:
    Reserved brandy (take out 1/4 cup if making cocktails)
    2 tbsp maple syrup
    2 tbsp melted butter
    2 tbsp whole grain mustard
    Bring to a boil, remove from heat and brush on pork while cooking
    Fig Raisin Brandy Old Fashion
    Makes 2
    Fill glass halfway with ice.
    1/4 cup soaking brandy
    split between 2 glasses
    a couple good shakes of bitters in each glass
    2 tsp maple syrup in each glass
    a squeeze of orange and a slice in there too.
    Swirl contents in your glass to mix. ;)

    Very interesting one this week, I'm sure it was delish! Great job on the butterflying, that looks easy watching you do it. And you still have all of your fingers!

      We used a couple of those flavor boosters for some smoked wings last night on the Weber kettle, worked really well and the chicken was delicious!
