the thing about filipino food its what we called "lutong bahay" which literally means "home cooked". so restaurants would just like how filipino prepare their food. i guess thats why it feels very comforting for some people because it just reminds them of eating at home, even if its culturally different for their own background.

Traditionally pork cheeks were used i think because of how cheap it is compared to pork belly which has an amazingly balanced ratio of meat, skin and fat. Im from Nueva Ecija so we do put mayo on our sisig and fried egg sometimes (not all the time) plus sometimes a little pieces of liver here and there gives the flavor so much depth (think of Banh Mi pate)
Moved here in Australia about 6 years ago and im proud to say i make a mean sisig

nakakagutom naman ang vlog na 'to, lahat ng paborito kong pares ang nilalantakan n'yo, naglalaway na tuloy ako, wala pa naman yan dito sa area ko, lalo na 'yong pork bbq kasi bawal ang pork dito.

I like the way they let it try the 1st flavor than with condiment. Then last with chili paste that made me hungry in an instant. That last thing needed was achara
