  • Buchi is a fried pastry with Chinese origin and very popular in Philippines and the rest of SouthEast Asia. They are made with glutinous rice flour and sesame seeds. Traditionally they were filled with bean paste or mongo paste. Now they are filled with ube, chocolate, cheese, etc. Buchi is popular because they are easy to make and a lot of people like the chewy and soft taste of these fried balls. Mine is made with camote (you can substitute with potato) mixed with glutinous rice flour so the buchi is softer to the bite. If you follow my recipe, you will be able to make buchi with no dents or dimples. You will get perfectly round balls that will not deflate even when they have cooled down. And one last reminder - do not make the buchi balls big to ensure that you do not get raw buchi.

    I substituted the boiled mashed potatoe with the instant mashed potatoe flakes and the filling with chunky peanut butter. It came out good too! Thank you Rose for the basics! More power! God bless!😊🙏

      I am sorry but I not very sure because I have not tried freezing it before frying but theoretically, it is possible.

      No you can't ma'am. It won't work. The imprint will not show and it will not retain its shape.

    Chef just wanna ask...is it fine if its pure glutinous flour? Because as I've watched others they mixed it with a rice flour. Thank you Chef.

      Yes. I used pure glutinous rice flour. Some recipes use a combination of rice and glutinous rice flour to soften the "pull" of the glutinous flour. I soften it by adding sweet potato instead. Thank you for watching! Happy Holidays!

      You cook the. mongo until soft. Strain to remove the peel. Mash. Add sugar and butter. Cook with constant stirring until thick. It is very tedious to make. Look for an Asian grocery nearby., you can find sweet red bean paste in cans - that is mongo paste.

      My recipe? If you follow the ingredients and recipe to the letter, it won’t shrink or deflate. My recipe will keep its’ shape and will not shrink. The photo was taken 5 hours after it was fried. Please review the video and try again.
