  • Piyaya or Piaya is a delicacy of Bacolod. I do not claim to be an expert on making piyayas. This is my version and so far, my students love this!
    The formulation of the piyaya like other native delicacies has evolved. Aside from the traditional moscovado sugar filling, piyayas now have ube, mango, pineapple, etc. filling. The crust now comes in the flaky, cripsy version. In my personal opinion, in this case, I believe that the one with the moscovado sugar filling is still the best and I like the modern, flaky and crispy crust. My version is not sweet but still very satisfying with a tender, flaky thin crust. Enjoy!

    I cook but one thing I don't do is bake. Never tried even once. Piyaya, Hopia, Moscovado and Ube are you kidding me. All my favorite snack in one. Moscovad mixed with rice. Ube cream just waters my mouth. Growing up in Iloilo, I have to get Piyaya from Bacolod despite Iloilo has Piyaya too. The difference is the Sesame seeds. The aroma of the seeds makes a big difference when eating. It looks simple, but I give all the respects to you.

    When I buy piaya, I choose the ones with the fillings that come out 😂🤭... I love it especially when the filling is a little bit burnt coz it's crunchy...😋

    Hi chef, thank you so much for the recipe. Planning to make these as a treat to my future guests at home. How should we store it in order to retain the texture? Pansin ko pong kumukunat siya the next day. Should we have it fully sealed po or okay lang sya ilagay sa ordinary container with a lid? Planning to put it in a fully sealed ziplock pouch po pero baka po yun po yung magpapakunat sa kanya.

      Wala na. You can use ube paste that we sell in the store by kilo. Cheaper siya.

      Chef Rose, I tried making ube piyaya using ube paste but it come out not soft ang filling, can i add lard or oil ?

    Hi chef, i'm planning to make ample pieces of piayas. How long does paiya last? How and where do we store it?

      Piyayas have a shelf like of about 7-10 days only. Make sure that you cook, cool and store properly. Wrap in sealed plastic. Store in a cool, dry place.

    Happy Easter po…can i use APF instead of cake flour? Are the materials of this doughs similar to that of the hopia? Thank you po

      The dough will be tougher if you use all purpose instead of cake flour for the oil dough. Yes the ingredients of this dough is very similar to that of hopia but the proportions are very different.

      Majority of my followers are still using the cups method. I used to have some recipes in metric but I ended up with so many messages on how to convert them to cups. So for now, I am still using the cups method. Putting two kinds of measurements in my recipes will also further confuse some of them. I do use the metric system in my kitchen because it is more accurate but it will take time to convince people to change. In time, we will gradually shift to the metric system. Until then, please bear with me. Thank you!

    Chef, pila ka days shelf life sa piaya? Can you recommend a preservative just to extend the shelf life? Daghan salamat chef

      About 3 - 4 days. You can use potassium sorbate and you can store it for a week or so. Piyaya does not really keep for a long time.
