Here's the rewritten recipe for Salt and Pepper Fried Chicken Thighs:
Ingredients:
7 chicken thighs, cleaned and slit in the middle
Salt and white pepper, for sprinkling
1 tsp Chinese five-spice powder
2 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp Chinese rice wine
1 tbsp sesame oil
2 tbsp olive oil
1 egg
Cornstarch, as needed
1 red bell pepper, chopped
1 white onion, chopped
1 chili pepper, chopped (optional)
3 cloves garlic, crushed
All-purpose flour, for dredging
1 tsp cornstarch
Instructions:
1. In a large bowl, combine the chicken thighs, salt, white pepper, five-spice powder, oyster sauce, soy sauce, rice wine, sesame oil, and olive oil. Mix well.
2. Beat the egg in a separate small bowl. Add the beaten egg to the chicken mixture and stir to combine.
3. Gradually add cornstarch to the chicken mixture, stirring constantly, until a thick batter is formed. Cover and marinate for 30 minutes.
4. In a shallow bowl, whisk together the all-purpose flour and 1 tsp cornstarch.
5. Dredge the marinated chicken pieces in the flour mixture, ensuring they are evenly coated.
6. In a large skillet or wok, heat oil for frying over medium heat. Fry the coated chicken pieces for 5 minutes.
7. Increase the heat to high and continue frying for another 5 minutes, or until the chicken is crispy and golden brown.
8. Remove the fried chicken from the oil and drain on a paper towel-lined plate.
9. In the same skillet or wok, stir-fry the chopped bell pepper, onion, chili pepper (if using), and crushed garlic until fragrant and tender.
10. Add the fried chicken thighs to the stir-fry and toss to combine.
Serve hot, garnished with chopped scallions or parsley if desired.
