    My dear Indi, there is nothing like an Indian breakfast !!! It all depends on the area you are talking about. You are right in that, this guy knows very little about south Indian food. Not that I am dissing him but, that is how it is here. I would know very little about Eastern Indian and North eastern Indian food.
    FYI;
    Idli = Steamed batter of rice and lentil. Like dumplings. Batter is generally fermented over night.
    Vada = Deep fried lentil batter +black pepper corn +other spices according to taste.
    Dosa = Batter of rice and lentils spread out a flat pan (like pancake) of varying thickness (batter is generally fermented over night).
    Malsala of masala dosa = Boiled and mashed potato (you were right in pointing out) seasoned with a little oil, finely chopped onions, curry leaves and other spices.
    Sambar = Boiled vegges+Lentels+tamrind pulp+water+spices.
    Chutney (please don't call it a dip or a sauce, it is "Chutney"!): Chutney shown in this video is grated and ground (blended) coarse coconut paste seasoned with a little oil, mustard seeds, chopped onions, curry leaves + chilies. There are thousands of varieties of chutneys from all over India. It is common all over India in one form or the other. Chutney is one of the very few dishes that can be called "pan Indian dish".
    Rava dosa = Batter is made of coarsely ground wheat called Rava and layed out very thin on the pan.
    Uthappam; Similar to dosa. Batter is thickly layered on the pan. Toppings are added made of finely chopped onions, grated carrots, finely chopped coriander leaves. One can add literally any topping of one's choice.
    Pongal: Boiled rice and lentils seasoned in a little oil with black pepper, curry leaves and spices. Yes you are right about ven pongal and the two varieties of pongal. Sweet and spicy.
    Oils or fat used are usually butter, ghee or vegetable oils.
    It is understandable that the list of South Indian breakfast here is incomplete. Yes, it is usually a vegetarian affair. My sense is that breakfast all over India is mostly vegetarian. We do have eggs once in a while but it is not a staple in breakfast we have here. (You should check out "Indian bread omelet" videos, very interesting). By the way, it is estimated that 40% of Indians are vegetarians but, there are very few vegans in India. We have our tea and coffee with milk. We love our curds (dahi or yogurt), butter, butter milk, lassi, paneer, not to mention the resurgent GHEE. Indian sweets are a different universe altogether.

      I am a South Indian in specific Tamilan with origin from kanyakumari for breakfast we prepare the following in our home usually in daily cycle :
      Generaly most of the dishes are paired with sambar or pudina (mint) chutney or tomato chutney or kara chatney (main ingredient is red chillies), or onion chutney or peanut chutney or coconut chutney or corriander (cilantro) chutney or curry leave chutney or have idly podi whichis usuallymixed with ghee or gingerly oil or coconut oil or vegetable oil ( powder made up of variety of lentils, dried red chillies, powdered curry leaves, garlic powder, salt).
      1. Idly - kind of steamed rice cake
      2. Dosa - ( according to the batter and toppings it has more than 80 varieties but prominently 10 varieties are used - plain dosa, paper roast, kal dosa, rava dosa, multigrain dosa, onion dosa, egg dosa, ragi dosa, kelviragu dosa, kambu dosa)
      3. Pongal - boiled (just like you said)
      4. Uthapam - just like a thick pan cake (just like dosa has lot of varaities.)
      5. Appam - kind of baked (just like dosa has lot of varaities)
      6. Puttu - steamed food (can made with any kind of grains but prominently using rice. It is not served with chutney but with papadam, green gram, chick pea curry or banana)
      7. Upma - boiled (made of rava generally)
      8. Idiappam - steamed (made of rice, looks a littlelike rice noodles due to texture)
      9. Kichdi - boiled (mix of rava, vegies ond spices)
      10. Adai - form of pan cake but made with half grinded batter.
      11. Puri kilangu - fried wheat bread
      12. Vadai - fried (Medu vadai, kerra vadai, parupu vadai, vazha poo vadai)
      13. Bonda - fried (rice and lentils bonda, onion bonda, potato bonda)
      14. Paniyaram - kind of baked (paniyarams can be made plain, spiced or sweet)
      Parrota and kothu parotta are generally not ate in breakfast but for dinner
      16. Parrota - made of maida and texture comes in layers generally served with salna( stew) or any meat curry(chicken, mutton or any other)
      17. Kothu parrota - parrota in made in pieces and spiced up.
      18. Chilly parrota - just like kothu parrota
      Orher than the regularly made ones:
      19. Uppu urundai - steamed ( not a very prominent breakfast in all parts of the state)
      20. Aval - cannot be specified since ot can be consumed in various forms
      21. Neer dosai - made with watery batter
      22. Vivikam - sweeted idlies

    Madhu here, from Chennai. For your question at @9:36, Sambar is made of lentils and spices. You may refer it as lentil soup ( for easy reference; don't say the,same to South Indian 😉 ).
    This dish has been awarded as World's best breakfast. Sambar has lot of protein and is served hot. Idli is made of Urad dhall and Rice and is made into a batter and fermented for about 8 hours. It is then 'Steamed' by pouring into moulded cup-plates. Since it is steamed, it doesn't lose any nutrients.
    Coconut Chutney (kind of a sauce for foreigners) is made of coconut, chilly & salt. One or two ingredients can be added extra for additional taste & consistency 🙂.
    Try this dish at a authentic South Indian restaurant abroad (say, "Saravana Bhavan") ❤

    I have visited chennai last year! the food and people there are damm good!! I would suggest you to visit south India or have a south Indian food in future!! I don't think it is too spicy BTW!

      Come on.. Chennai is the most dirtiest place with bad hygiene and worst drainage system. Everywhere bad smell and dumpingyards. So many times in news for growing vegetables in worst sewage water and wash in bad water as no water available in Chennai. Stay away from food there. Becareful if u r there

    Hi Indi. @5:58, it is Pongal (non sweet version; Also called Ghee pongal). The sweeter version of pongal is usually brown in colour, called 'Sakkarai pongal' or simply 'Sweet pongal'

    @4:19 he is using spoon because people in Northern India don't necessarily eat with their hands. Although eating with hands was practiced all over India but Now in Northern India only people who live in Villages use their hands to eat. Like i live in Delhi and i use spoon/forks but my native place is Uttarakhand which is a northern Himalayan state and people over there in villages still eat on a banana leaf and eat with their hands.

    Idli is 70% rice carbohydrate and urud 30% protine, urud vada 100 % protein sambaar is vegitable mixed curry, if you eat with your finger, it taste better. coconut chutney full of nutrition and taste excellent.

    Every dish you see there is breakfast! About 80-90% of dishes is made from rice! As it is a staple food in south.
    Sambar - mostly a lentil-based vegetable stew which differs from in every region like there is different sambar every 50-100km in South!

    Hi indi... This video is showing all veg food from chennai. Not from all the South India. In Kerala we have special like Appam(rice and coconut milk pancake),rice hoppers both goes very well with veg stew and egg curry. Flaky Paratha(Kerala paratha)have a famous combination with beef roast or beef curry. We do eat dosas and idly mostly as it is easy to prepare once you master how to make the perfect dosa batter.

    Sambar is lentils+vegetables soup thing. North indian consumes mostly lentils known as Dals, but south indian mixes lentils and vegetables to twist it and call it sambhar

    Sambar masala is actually different at each store ... each house ... so hence it tastes different everywhere ... sambar is basically a curry with veggies cooked nicely with little lentils ... idli is comparable to pancakes .. but idli is so healthy because it doesn’t use any oil and it’s baked ... we also don’t have much processed food ... hmmm... you should look at channels that has the same food with a nice chicken & goat curry .... once travel is lifted and safe to travel ... check out the restaurant Madras Masala in Ann Arbor Michigan ... it’s the closest to have authentic South Indian food in the whole US ... and I am a foodi :)

    Hey Indi, I'm from Chennai. This is going to be long.
    We do eat eggs and meat a lot but for breakfast we tend to eat vegetarian as it's a better option for the start of the day. Since we live next to coast (Chennai has Marina Beach - world's second longest), we consume fresh sea food as well. Beef is a rarity (common in Kerala and north east). Pork is consumed mostly by Anglo Indians.
    Here's a breakdown.
    Idli/Idly - It's basically rice cake. Light and fluffy middle and has a bland taste. Made of a special kind of rice and Urad dhal. Chennai Specialities include Kushboo Idly (the fluffiest), Thattu Idly (Plate Idly - size of an 8 inch plate), Ghee Podi Idly (commonly called as "Gun Powder" slathered with ghee and the said Gun Powder) and Kancheepuram idly.
    Medhu Vadai - It's the same batter used for idly but the rice to dhal proportion varies. It's close to a deep fried doughnut but the flavor and texture is different. Usually contains green chillies, onions and pepper corns. Another variant is called Masala Vadai which is full of Dhal.
    Pongal - This is made of whole/broken rice and Dhal. The consistency is of oatmeal. It's a filling food. The spicy variant he has is ven pongal (white). The sweet variant is called sakarai pongal (source of sweetness is jaggery).
    Dosai - The batter is slightly watered down. It's just like a Crepe. There are more than 50 varieties and the iconic ones are Masala Dosai, Onion Dosai, Rava Dosai (Rava means Semolina) and Ghee/Paper roast (it's so thin and brittle). Chennai is famous for Family dosai which is 4 to 5 feet long and serves a whole family.
    Utthappam - Slightly thicker batter than a Dosai and the consistency of a pan cake. The famous varieties are onion, tomato and podi.
    At last Filter Coffee. Coffee Powder and water are added on one layer of a utensil and the decoxtion is slowly filter. Then milk and sugar is added and served in the Tumbler + Davara/Dabara set (the utensil this person was served in).

    Thing is there is no bread in the whole video! Here its basically like almost similar rice and lentle batter for Idli dosa and vada but idly is kind of steamed one, dosa is almost between crepe and pancake, vada is a deep fried batter. This is very basic and simplified version to tell it but there are lot of things associated with Breakfast. In South u can have like 10 - 12 unique kind of breakfast and each unique item can have atleat 5-6 versions of it so thats a lot of flavor variations you in breakfast.

    Chennai is a humid city with the beaches nearby. So one might need little more carbs than usual , per meal. Base is like Idli , Dosa , Uthappam & are made of rice provides the carbs & sugar . The side dishes like Sambhar ( made of lentils) , Chutney ( coconut , corriander , onion etc ) provides the proteins . Ofcourse some sesame or groundnut oil or butter or clarified butter to provide little fat. Eating dosa will make you thirsty , Idli will digest faster & it has iron content due to uradh dal (seeds) . Navadanya is Multigrain kind of dish .South Indian coffee is very milkish ... They add decoction & milk nearly 4:6 ratio. Rava masala dosa - Rava is a grainy rice ...made into a batter with onion chillies etc to add flavour as it is little tasteless .The consistency of the batter is nearly like water unlike the regular dosa batter which you saw in the beginning of the video. Masala is just a dish made with mashed potato , oinions , chillies , garlic , tomato , ginger . It's tasty ...& can also be had with Chapathi , roti , poori etc. Sometimes masala is stuffed inside samosa as well 🙂

    Hey Indi, Idli With Sambar is a typical Tamil breakfast dish, which is common across entire South India.
    Idli is a sort of rice cake, the batter of which is made of grinding rice and black lentils with water, fermented and then steamed. It's very easily digestible, having protien carbohydrates and minerals, but free from any Kind of fats.
    Traditionally Sambar is made of a lot of vegetables like tomato, brinjal, ladies finger, cucumber etc with Toor daal which also is a healthy dish. ; Making the Idli-Sambar Combo a complete diet.
    U should try the home made dish to get any dish in its genuine taste and benefit, anywhere in the world. Consider this as a formal invitation to India. Welcome to India, welcome to Kerala.

    In The Southern states of India you find mainly rice based breakfasts, also in the east, in the west it's mainly millet based and in the North it's Wheat based. Legumes or lentils are also mainly used . It's very difficult to explain what is exactly breakfast in India. What initially started of as breakfast items in India are now eaten as a snack anytime during the day. Nowadays there is no South Indian or North Indian breakfast.     Breakfast in South Indian states (Kerala, Tamil Nadu, Karnataka, Andhra) mostlysavoury consisting of idli, vada, dosa, poha, uthappam, pongal, sheera (sweet); additives are chutneys, sambhar, potato fillings. In Maharashtra its poha, puris and additives. In central and north indian states like Uttar Pradesh, Madhya Pradesh and Bihar its puries or rotis and bhaji (potatoes or other savoury filling). In Punjab and Haryana its rotis or paranthas with chole, bhaji, fresh curd. Bengal has an assortment of goodies like puries and bhajis and sweets. Breakfast is not usually a non vegetarian meal unless you happen to be muslim or parsi. Urban people may have eggs regularly. Many international chefs ( Michelin starred types) feel that the south Indian breakfast is the most healthy selection worldwide. Urban American breakfasts of bagels / rolls and coffee (NYC) are rather uninspiring (I think). But home cooked breakfasts of pancakes, eggs, bacon / sausages seem to work well for a day with a lot of physical activity. I agree with you that there nothing like fruits..plenty of them. Truly, food of the Gods.

    U as an Americans need 1000s of Year’s to learn sambar of tamilnadu,because it’s ingredients,mixing,timing of its add, etc etc so every house has their own kind of sambar,with different taste,smell,🇮🇳😂💐👌👍💪🏼🙏✌️

    Southern India has different kinda food, not just 4 or 5 or 6 so many items, southern India has 5 states, each State has different food.

    @indi in india, restorans called as hotels... Hotels called as lodge (small and medium level) . 5 star or more still called as hotels (which comes with restorents n bars).

    Chennai is capital of tamilnadu state, I live in chennai City, I have gone through all those places..there are many more dish for breakfast..egg and meat generally not eaten in breakfast...I'm pure vegetarian...south Indian breakfast you will coconut paste, onion paste, tomato paste and sambhar in any breakfast...

    Usually, the real Indian food, that mean those used to be cooked in Indian households before 1991 (the economic liberalisation in 1991), was not meant for visual presentation, though no compromise in taste and aroma. After 90s, western food entered the Indian market like Golden Arches, and eastern cooking technique influenced (that is, fried food like fried rice etc with food-oil business started to peak, coz without oil you can't fry). Steamed breakfast food is healthier than fried oily modern Indian food. That's where South Indian food betters.
    You should try 'Indian thali' lunch. You will become your own cook called 'The secondhand cook'. I mean, Its already been cooked, but you mix all the cooked ingredients given to you separately to create your own taste and style food. What I invented when I was a kid was, mixing boiled egg yolk to rasam rice.

    Uthappam is a type of dosa from South India. Unlike a typical dosa, which is crisp and crepe-like, uttapam is thicker

    Each state in India has its own specific breakfast. It wouldn’t be an exaggeration if I say each city boast about their own breakfast/recipes. Pongal is a dish (has both sweet and salty versions) as well the name of a festival, both from South India.

    Eating idli and Wada with spoon gives u complete taste...u can scoop up sambar chatni with idli n wada so that u can feel it whiel u eat it 😉💕... while if u eat with hand u can just dip it in sambar n have it which won't give u much yummm 🤤🤤

    Definition of indian breakfast is different in different regions.. Once u come ull know what i mean. But in mumbai ull find almost all kinds of breakfast where its south induan or north indian or Mumbai based breakfast. In mumbai common breakfast would be poha, upma,vada pav,bhajiya,idli, misal pav and samosa

    We have a concept called military hotels which also serve spicy meats with idli , dosa . So it's not entirely vegetarian , but yeah mainly it's veg.

    1: 09 - Traditional Indian breakfast is too varied but divided into main categories of items made from Rice, millets and wheat in one form or the other.
    Idly is steamed Rice dumpling , vada is similar to donought in looks but spicier. Usually eaten with Chutney's and or with sambhar (lentil soup- can contain veggies)
    2:33 Nah breakfast has always been a part of Indian food. Farmers would eat Millet balls / chapati/parata's with onions N ROASTED CHILLI.
    Others eat IDLI, VADA, DOSA, UTTAPPAM, PUTTU, UPMA, MYSORE BONDA(BREAKFAST N EVENING SNACK ITEM), COOKED RICE SOAKED IN WATER N YOGURT( RICH IN CALCIUM N ZINC), MALT MADE FROM MILLETS, UPPU URUNDAI, PANIYARAM, SPICY PONGAL. ADAI, APPAM, IDYAPPAM

    10: 48 - Navadani uttappam means pancake made from nine different grams/ grains, all soaked together, blended into a dosa batter. Then you can add whatever u want on it.
    12 20- rava means finely broken grains/ semolina, masala is stuffing Dosa is pancake 😁. I ABSOLUTEY AM CRAZY ABT THIS ONE
    12 50s the things in the containers are Raw coconut chutney, sambhar, groundnut chutney and the onion potato curry which can also be used as a filling.

    Ven (white) pongal is a breakfast, it's not sweet and goes well with sambhar. The other is Sakkarai (sugar) pongal which is golden in color prepared for special occasions such as festive seasons. The sugar consumption is very low here. None of the traditional breakfast usually has any sugar in it.
    Traditional chennai-Tamilnadu breakfast :
    Idly , Dosai, Poori, Chappathi, pongal, aappam + cocunut milk, puttu , idiappam, upma, Dosai has 5+ varieties cooked for breakfast. Navadhaani - Nava (9) , Dhaaniyam (pulses, grains) uthappam - marinated dosai batter for a night.
    Rice is usually for lunch and dinner

    South Indian foods are prepared from rice(main dish).. we have dosa, idly, pongal, kichadi,porata etc for breakfast most time.. not most people in south india are veg or vegan(not at all)... Most people are non vegitarian in South India....for breakfast we have this idlies dosas and ven pongal which salted one with sambar, chutney , chicken gravy, mutton gravy, fish gravy... Dosa and idlies are prepared from rice batter... Idly is cooked out oil from presser cooker and dosa is cooked in tavas with oil poured in it...there is lot of things about South Indian food that North Indian understand...

    FYI south indian dish doesnt have any kind of breads. Dosai is made up of Rice urad dal batter. Both idli and Dosai are made by same batter. Except dosai made by a one day aged batter in which the yeast formation gives u a mind blowing taste where as idli is made within an hour aged batter. Idli is steam baked and dosai is pan fried.

      Sorry to say. Both are fermented over night after grinding. For dose batter they add little more vendayam.. I dont know the English name for this.

    3 54 - there are some specific types of rice grain best for making Idli. These are seperately mixed with urad dal( kind of pozole) n ground into a batter as seen then u can steam them or even fry them in different variety.
    5.07, It does but its so worth the taste . at home we can choose one of them or first add bit of chutney n then some sambhar. You can eat it with mango , lime pickles.
    5: 58 , khichdibis usually made from corasely broken grains of rice or wheat white Pongal is made from a combo of normal rice n some dal.
    Venn pongal is the spicier version eaten as seen, sweer pongal made with Rice , jaggery and even milk

    I am to point out that, none of the Kerala's breakfast food items such as Puttu, Idiyappam, ,Vellappam, Pathiri etc. were not included in the South Indian breakfast. I am sorry to say that it is a glaring omission. Besides, the above, Iddli and dosa too are our most common items.

    There's a difference b/w North Indian and South Indian Culture when it comes to using utensils and touching food. North Indians prefer to touch food with hands that are dry i.e. Roti, bread, snacks etc. They make these breads into a scoop shape to scoop out wet part of the food (especially watery) i.e. curry, soup etc, or else eat wet food with utensils. South Indians generally touch and mix with hands food items that are dry and wet. However, you'll find exceptions i.e. some North Indians will eat all kinds of food with bare hands, and South Indians will use utensils to eat food.
