I had asked another channel that used cast iron if he had ever done butt like this on weber kettle, he claimed no he had not but he cooks in quantity.Would that type of cast iron oven sit on top of weber grates. Lastly you must let us know how you keep your athletic figure creating such product. 👍🏼👍🏼👍🏼👍🏼👍🏼
Yet another option might be a granitewear roaster (enameled steel). A smaller, "chicken-sized" roaster would fit on most grill grates; on the indirect side.
That Sandwich looks killer 👍🏻 I also like cooking it in the dutch oven, stays really moist that way. As I am living close to the border I am also Mayo addicted. You have the real good stuff 👍🏻

Would cooking the pork in a pressure cooker first and then putting it in the smoker work? And would the smoke flavor stick? I'm pretty sure it would be quicker, but will it be anywhere near as flavorful?
I believe the meat only takes in the smoke until it reaches 140º F. Reinout de Mol is correct smoke first than pressure cook. Wondering if the pressure cooker would force the smoke flavor out of the meat?

FWIW, there's a gland in the shoulder you should remove before cooking - pork has a lot of them, even seen them in bacon. Takes a bit to learn how to find it. But overall a nice video. 4 hours is not a bad time. And try it one time without the bbq sauce - just smoked and pulled all it's own. And to keep too much moisture from escaping your dutch oven (that's what we call your cooking vessel) you might try sealing the edges with oatmeal paste like moonshiners do. Just an idea. The way I used to do my pork butts was to coat them well cajun seasoning - ie. like Tony Chachere's cajun salt - then throw them on the charcoal grill to get some good marks and color. Then put them in a roasting pan and cover it with slice bell peppers, onions, jalapeños (seeds in or out depending), whole garlic cloves, maybe some plum tomatoes if you like. Cover it well with aluminum foil and roast it slow in the oven for 3-4 hours til pull apart tender. Makes it's own sauce and the veggies just melt. Ready made for tacos and burritos and sarnies.
I love the videos, but I gotta ask. I noticed you wear the same type of sweater thing in all the videos. What is the temperature there? I'd die of hest stroke wearing that thing smoking. And your sleeves get in everything 🤣🤣

You'd have to do it the other way round. Smoking works best with cold meat.
I believe the meat only takes in the smoke until it reaches 140º F.

Sounds crazy, butt try Yellow Mustard instead of oil on the meat . It's what we use in the Carolinas for ribs and butts.

If a Weber 22. 5 grill is affordable give it some consideration. Been using one last 4 years . No problem cooking for 6 or more people.
