Anywho, the original version that I grew up with ftom Jalisco to L.A. to Upper high 🏜, ranch area's, still use original version with Chivo or Borrego/Cabrito. Plus I agree with another commenter, Consume is the old version in making Birria. The broth/consume is soo sabroso & very healthy. For tacos or quesaBirria, the meat is allow to drain abit before either adding màs Salsa over Birria in a skillet n then transferred to a tortilla con queso on a comal. Adding of course condiments in QuesaBirria. 😊 "Isa"

Yes, Birria is appearing on menus all around the SW. I didn't realize that it was lamb, as in your version. In Tucson most places are doing it with beef and serving a side of the more liquidy juices from cooking for dunking. I long to watch more episodes of any programs that you do, along with your linda familia! Sabor y bendiciones para todos.
Tijuana style is birria de res (cow) the authentic original one is from chivo (goat) but the trend of the red birria tacos with cheese like here in Los Angeles is because it's inspired by the tijuana version of using cow (res)
I have had birria and have seen so many stands and restaurants selling, but it wasn't with actual goat it was with beef, but they still call it birria. It was still so delicious 😋
