Try this South Indian special veg biryani
Ingredients
4 cups basmati rice
3 tbsp oil
1 tbsp ghee
2 bay leaf
2 inch cinnamon
1 star anise
1 black Cardamon
2 Green Cardamon
5 gm Black Stone flower (Kalpasi)
3 Cloves
3 medium Size onions
1 tbsp Ginger Garlic Paste
1 cup Small of Bunch mint
1 cup small of coriander leaves
5 green chilies
2 medium size tomatoes
100 gms Carrot
100 gms Beans
1 tbsp biryani masala
1 tbsp Red Chili powder
¼ tsp turmeric powder
1 tbsp curd
8 cups of water
1 ½ tbsp salt
½ lemon juice
Method
In a pressure pan heat the oil and ghee on a medium flame
Add the bay leaf, cinnamon, star anise, black cardamon, green cardamon, kalpasi, cloves and give a good mix
Now add the sliced onions and saute well for 5 to 7 minutes
Then Add the ginger garlic paste and saute until the raw smell goes off
Add the mint, coriander leaves and green chilies and saute for 2 minutes
Now add the chopped tomatoes and cook until they become soft
In this stage add the carrots and beans and mix well, saute well for 1 minute
Add the biryani masala, red chili powder and turmeric powder and mix well with vegetables
Now add the curd and mix well
Add the mentioned amount of water, salt and mix well
Add the lemon juice to enhance the flavour
Bring the water to the boiling temperature
Then add the washed basmati rice and check seasoning
Close it with lid and cook for ten minutes on low flame
Once the pressure is down, open the lid and garnish with mint, coriander leaves
Serve it hot with onion raita and chicken curry
