Spicy Chicken Fry
Ingredients
For Chicken Marination
500 gms Chicken (Boneless)
1 tbsp Red Chili Powder
1 tbsp Coriander Powder
½ tbsp Garam Masala
¼ tsp Turmeric Powder
1 tsp Pepper Powder
1 tbsp Ginger Garlic Paste
1 tsp Salt
1 tbsp Curd
For the Masala paste
4 inch cinnamon
3 cloves
1 tbsp coriander seeds
1 tbsp pepper
1 tbsp cumin seeds
3 Red Chilies
For the Chicken Fry
5 tbsp oil
For the Final Fry
2 to 3 tbsp oil
½ cumin seeds
3 inch Cinnamon
6 garlic cloves (Minced)
3 sprigs of curry leaves
2 medium size of onions
1 tsp ginger garlic paste
Method
Wash and clean the chicken
In a bowl add the boneless chicken add the red chili powder, coriander powder, garam masala, turmeric powder, pepper powder, ginger garlic paste, salt and curd
Mix all the ingredients well with the chicken
Marinate the chicken for 30 minutes
Heat a pan, add the cinnamon, cloves, coriander seeds, peppercorns, cumin seeds, red chilies
Dry roast the ingredients for 5 to 7 minutes
Cool down the spices and add them in a mixer jar
Grind them into fine paste using few drops of water and keep it aside
In a pan heat 5 tbsp oil, add the marinate chicken in batches to the oil
Fry them on both sides until they become light golden colour on a medium flame
Keep the Fried chicken aside
In a kadai add the remaining fried oil ( if required add additional 2 to 3 tbsp oil) on a medium flame
Once the oil is heated, add the cumin seeds, cinnamon
Then add the minced garlic and saute well
Add the Chopped onion and curry leaves and saute well
Add the ginger garlic paste and saute well until the raw smell goes off
Add the grinded masala paste, add the water to the mixer and add the water to the kadai
Close it with lid and Cook the masala for 5 to 7 minutes on a low flame
Cook until the oil separates from the masala
Then add the salt and mix well
Now add the fried chicken to the masala and mix well
Cook the chicken in the masala for 3 to 5 minutes on a medium flame
Then switch off the stove and garnish the chicken fry with coriander leaves
Serve the chicken with rice and rasam
