    Have you ever thought of making this recipe with mature plantains instead of bananas? I grew up in Panama, and there is nothing sweeter than a ripe plantain. The skin on the outside should be black, even a little moldy, but it doesn't penetrate to the fruit. Thank you for this recipe, though!

First time I ever had Bananas Foster was 3 July 1976, when our next door neighbor, who was the British Consult on the Caribbean side of Panama where we lived, invited my brother, his wife and me to dinner at the Parker House in Boston (as in Parker House Rolls). Our neighbors were there to attend a reception given by Queen Elizabeth II. Alas, we were not invited. But I was inaugurated into fine dining while still a teen.
