Creamy Rice Pudding Recipe (Dessert Risotto)

  • I've taken my some of my favorite ways to eat rice and mashed them up into a rice pudding that I'm calling dessert risotto. It's an extremely creamy and luxurious way to eat your carbs.

    RECIPE
    ------
    RICE RISOTTO-PUDDING
    ▪115g/1 stick unsalted butter
    ▪300g or 1 1/2c arborio rice (not rinsed)
    ▪700g or 2 3/4c milk (unsweetened non-dairy milk also works here)
    ▪400g/1 can heavy coconut milk + additional 170g-200g or ¾-1c coconut milk to finish
    ▪6g or 1sp salt
    ▪100g or 1/4c sweetened condensed milk
    ▪3g or 3/4tsp vanilla extract
    Heat large, heavy bottomed pot over medium high. Add butter and melt. Add rice. Stir and fry rice in the butter until rice is becoming translucent on the outside and butter is just starting to brown.
    Preheat sauce pan over med-high and add in milk, 400g/1can coconut milk & salt. Stir and bring to a simmer.
    Add ¼ or 250g of hot milk mix to rice. Stir then simmer over medium heat for about 2 min or until milk is absorbed into the rice, stirring occasionally. Add in another 250g of the milk mix, stirring every 30 seconds or so until milk is again absorbed into the rice. Add remaining milk (about 500g at this point). Stir, reduce heat to low and cover. Cook covered for 15min. Stir, remove from heat, recover, and allow to steam for 10-12 more minutes until tender and most of the milk has been absorbed. Stir in sweetened condensed milk & vanilla. To finish, stir in Additional 170g/3/4c warmed coconut milk. Plate up and garnish with an additional 3-4 spoonfuls of hot coconut milk on top, mango, pinch of flaky salt, and a sprinkle of toasted coconut flakes.

    ▪Coconut flakes, toasted (toast in med pan for 2-3min over med heat until lightly browned)
    ▪Mango, large diced
    ▪Coconut milk (heated)
    ▪Flaky salt

    I made rice pudding out of risotto once. I chilled it in a ramekin, tipped it out, bruleed the top, and added some fruit compote on the side. Was incredible.

    I love how just about every culture has some version of "hot milky rice dessert" I grew up in missouri and my mom always made a sugary milky rice dish with cinnamon and raisins

    In Germany we eat something similar for lunch sometimes: It is called Milchreis. We use a starchy short grain rice that is sold as Milchreis. It is similar to risotto rice. I combine 4 part milk with 1 part rice, bring to boil, cut off heat and wait 45 minutes until rice is soft. I top it with sugar, cinnamon, applesauce and brown butter. My favorite dish as a child. The dry rice itself is pretty cheap and makes a great substitute for relatively expensive arborio rice.

    If you are going to serve cold rice pudding, here's something I really consider a game changer: before serving, whip up some heavy cream and fold it under the rice. This will make your rice pudding incredibly creamy luxurious and (kind of) light and prevents it from being dry and sticky.

    I made this last night, I had my scale and followed the proportions exactly. It turned out exactly as shown in the video, GREAT RECIPE! For my taste though I had to add more condensed milk, a bit more, we're sweet tooths! ;-) This is similar to Brazilian sweet rice, but they put clove in at the start and serve with cinnamon on top.

    Yummy! Rice pudding is actually a very common dessert here in Bulgaria, but we do not add coconut milk and we serve it by sprinkling cinnamon on the top. I'll try it with mango next time, thank you for the idea😁😊👩🏻‍🍳

      The best rice pudding I have ever had was in a Balkan resto here in STL. I think owners are from Turkey/ Bulgaria. It was rose and pistachio. Amazing

    I'm definitely going to make this one! Rice pudding was a frequent breakfast growing up usually made with leftover medium grain rice (we'd buy 30lb bags of calrose). The texture on this looks amazing! I might add a bit of ground cardamom or steep some in the milk because I love the flavor and it goes great with mango and coconut.

    i make my Portuguese grandmother’s rice pudding recipe every time i go home for thanksgiving and christmas, it uses like 7 cups of milk, a bunch of egg yolks, sugar, lemon rind, and cinnamon on top (i like to put some inside too but my dad prefers it to be just on top). it takes foreverrrr to make though, im standing over the stove stirring it for so long until it gets thickened from the eggs. the recipe makes two big trays worth, so it’s great to have when family is over.

    This dish is also common in Sweden. It’s eaten mostly in the winter and its especially associated with christmas. We usually eat it with sugar, cinnamon and milk.

    Love rice pudding. I’ll have to try this method. I make mine Indian style with cardamom seeds, cumin seeds, and a cinnamon stick. I also like to put white raisins in it half way thru the cooking.

    My mom always made a baked rice pudding that was made with eggs it was more of a custard with cinnamon and raisins sooo good. Yours with the coconut milk reminds me of the Indian dessert with coconut and pistachios although the ones in the restaurants are usually too sweet.

    I started dry toasting my arborio when making risotto without any oil or butter to get an even more pronounced nutty flavour.
    Would probably work great with this dish too!

    In Sweden, rice pudding or „rice porridge“ is so popular, there are even ready made small containers with a variety if fruit sauces to buy on the go. Kids use to love it.

    I've only ever had rice pudding loaded with cinnamon and raisins.
    This has me pondering other fruits. I bet peaches would be good.

      Peaches was my initial idea as well. Fresh, or grilled slightly to bring in some of that caramelization, or even stewed down a bit.

    this is something we eat every Saturday. :P A very Norwegian tradition is also to eat this at Christmas. To make it even better, save the left overs and let it cool completely down, add some whiped cream and serve with a delicious strawberry sauce. Yum!

    Not too long ago I made my mom's mexican rice pudding, arroz con leche, and was thinking how I could lighten the finished product with some addition/replacement with coconut milk.     Coconut cream for rice pudding is pretty traditional here in Brazil, flakes and all (just we normally would get them freshly grated). I have been doing a quite similar version of this for a few years, great to pick up on a few technique points!

    Great video as usual! 👏🔥 Since I am from Balkans, cinnamon is a must in any rice pudding recipe, at least for me. Addition of the mango is a quite nice idea to make this meal posh a bit.

      Portuguese rice pudding is also nothing without cinnamon. Usually its cooked with a cinnamon stick and lemon zest and finished off before eating with powdered cinnamon

    Pretty nice Brian, in México we have something similar called "arroz con leche" (rice with milk) and it consists of milk, rice sugar, vanilla extract, heavy cream and as a personal touch i like to add rum, raisins and cinammon for that extra BALLER factor, you should try it sometimes, it's a life changing experience, cheers

    we in germany make sth called 'Milchreis' (milk rice). you just cook the rice in milk until its thick and eat it with sugar and cinammon. some like to add melted butter too. usually round grain rice varieties are used for it.

      My grandmother used to make it. I remember she put the pot in her feather bed lol served with melted butter and cinnamon, the comfort food of my childhood. Good memories. I’m 65 now.

    Here in Brazil it is known as Arroz Doce (sweet rice in a direct translation) optionally accompanied with cinnamon. Despite being a common dessert throughout the year, it is typical of the Festas Juninas in the middle of the year, when it is colder.

    my favorite component of mango sticky rice missing from this adaptation is the salty coconut sauce. like that spoonful of coconut you added - if that were distinctly saline it would really take it to the next level imo

    Love your vids! Everything I’ve made from your videos has been the best/ coolest/ complex thing I’ve ever made. Which tbh isn’t saying much because I’m super new to cooking haha.but still… sooo good l. Would love to see a series or even a single vid on how to nail the more simple things in cooking. I.e. how to roast some veggies real good (blanch or nah?) or at home French fries or idk simple things ya know? Also! Please make a risotto video!! My husband makes a mean one but would love to see your take :)

    Where I'm from we eat rice pudding cold, straight from the refrigerator. I cannot even imagine eating it hot. Will try the recipe, but I would have to stick it in the fridge for a couple of hours before eating it though.

    Add fresh vanilla corns and the stick while cooking - this is usually done when making a similar rice desert in Denmark. The "pudding" in your case, will look much more luxurious with the small black vanilla corns! And the taste if ofc better than the extract :)

    I've tried several rice pudding recipes and it never comes out exactly how I want, particularly texturally. I just tried this one and the texture came out BEAUTIFULLY! It was a little bit too salty and not sweet enough for me, so next time I'll probably half the salt and double the sweetened condensed milk. Thanks for the recipe!

    Oh dear I'll have to sit this one out (sorry Brian!) at primary school they would try force me to eat this and now I can't even bare the smell! (Growing up in the 80s eh? 🤣)

    Try Vialone Nano or Carnaroli rice for this. That's the variety mostly used in Italy for risotto recipes

    Not a huge mango fan myself but as stated in the video I bet this would be SUPER bomb with pineapple. Also just for personal preference I'd probably use something other than coconut flakes for the texture component, with all that coconut milk already in there I'd want something with some different flavor, maybe some toasted pistachios or cashews.

    Arroz con leche! (en Argentina) Mas antiguo que montar a caballo! jajaja en su mejor versión no es necesario cocinarlo con manteca, lo podemos hacer directamente en la leche. Que interesante el agregado de leche de coco! Muy genial este video!!!

    When I first saw this dish (before I knew it was toasted coconut and mango), I thought you were going for peach and slivered almonds- also a delightful and fresh combo! This dish seems so perfectly thought out, I'm hesitant to even think about alterations, BUT- if I wanted similar creaminess without the coconut, what would you recommend? Thanks!

    Here in Finland we call this "rice porridge". Maybe I'll take some inspiration, like sauteing the rice before adding the milk, to see how the flavour changes. I just love mine with some bilberry kissel or during Christmas, dried plum kissel. Older folks love with cinnamon, sugar and a knob of butter :D

      lol, I don't think I am quite "older folks", but in the states we very common to have butter, cinnamon and sugar in rice pudding. The berry kissel sounds great though!

    Rice puddings are typical dessert/snack in the Philippines. We use glutinous rice and coconut milk/cream.

    I have recently bought coconut cream looking make a rice pudding like this. I usually use carnaroli rice nowadays rather than arborist or the long grains. I haven't gone full risotto method like used here, but I will give it a whirl.

      @@samuelmahoney6878 i never see it in the regular grocery store. Perhaps Whole Foods. the real risotto rice is made from this not as much Arborio. I taste the difference.

    In Sweden this is a staple food, and we simply call it rice porridge (makes sense, right?). It's actually not eaten as a dessert though, it's actually more of a breakfast dish, and it's traditional around Christmas.
    Furthermore, one of our classic Christmas desserts are actually based off rice porridge, and a bit similar to what you just made... Let the porridge cool completely, then mix it 50/50 with more vanilla and heavily whipped cream. This is called "Rice á la Malta" (strange name), and is served with freshly diced orange slices OR canned mandarin slices.

    This looks a lot like "arroz doce", Brazilian Sweet Rice. We venture in the realms of sweetened condensed milk because... Brazil (and add clover and cinnamon). But yours looks lovely with the mango!

    Not a fan of the coconut, but your preparation method gave me some ideas. I'd use milk and heavy cream for richness. I'm a cinnamon guy for serving rice pudding, icy cold.

    One of my favorite sweet foods. What rice can we use instead of arborio? It is not available everywhere or it can be expensive.
