On snowy days when my daughter Brodie was little I used to make potato soup and cinnamon rolls from scratch. Brodie and her Daddy would be outside shoveling the walks and clearing off the cars while I was busy in the kitchen. Nice memories.
Oh that sounds so good! I'm getting ready to make a version of this soup using all the same except adding asparagus, kale and spinach and using homemade chicken broth. But I think I will mix up some cinnamon rolls too! That sound wonderful!
Looks delicious. My mother used to have soup on the woodstove when we came home from school. The combination of wood smoke and hot soup was the most welcoming thing imaginable

I live in a 120 yr old cottage here in New Zealand, and while I have a modern stove - I use the original wood stove all winter. There's always a pot of soup bubbling, plus it heats the hot water and saves on the power bill. The old wood stoves are much sought after here.
@@p_roduct9211 - Well mine are no longer young but when they were I used 3 sides of an old playpen to surround the stove. And as for the pets, they clearly know not to get too close but they do lie on the rug in front of it - all winter long lol.
My grandmother used to make something similar, but she kept the diced veg chunky and added pearl barley to thicken it. I make it myself nowadays; it keeps a few days in the pan on the stove, and actually gets better during that time; just keep ladling out a bowlful and reheat it in the microwave. My dog also loved the dregs from the pot poured over his kibbles.
I was thrilled to see the addition of the frozen peas at the end. Although the aromatic veggies are cooked, to well done, enhancing the flavor, fresh texture is so pleasing.
Rustic vegetable soup. Yes, on a really cold day, the soup tastes especially good. Now I make it for my mother who is 101yrs old. A family favorite for generations.
For any of my vegan cooking I just use coconut oil for the saute, plus a bit of extra virgin olive oil or avocado oil at the end for a "buttery" flavor. @yerb One good way to enjoy them is to boil them as you would a potato, then mix with boiled potatoes. Run them through a ricer (or mash ‘em) adding butter, cream (or whole milk) plus salt & pepper.
@yerb Parsnips have a sweet taste, I find them quite delicious, I don't know why they are not used more. Try steaming them and serving with butter and a little salt.

Both times while visiting all through Ireland we fell in love with their vegetable soup. Our first time eating it was in March, 2014, at a pub in Virginia, County Cavan. We ordered it almost everyday wherever we went throughout the country. Couldn't wait to eat it again when we returned in May, 2019. Thank you for posting this video. Hope to make it this week for my family.
I’m gonna try this tonight with whatever I find here in Turkey :) it looks absolutely delicious and reminds me of my swedish mother’s leek and potato soup
I'm astonished by how rapidly the frozen pea ball-bearings softened and cooked through in that non-simmering soup. I don't feel confident about replicating that part of the recipe myself because every time I cook with peas they take just that little bit longer than I imagined they would. So I think I'd add peas that had been pre-boiled for a little bit. If that sounds like it would work out, then this dish looks so delicious that I could see myself having two bowls over the course of a winter afternoon-- yum!
I am not Irish, but I have been making this soup all my life. I do not like to blend it, what I do is cook a couple of potatoes just cut in half and a piece of butternut squash, at the end of the cooking I blend those with some stock and add it to the soup. Then add cream, I love it with chopped cilantro on top. Looove soup, I have it winter and summer.
WOW and you even provide metric measurements, I'm impressed! I'm making this for dinner tonight and can tell already I will not be disappointed - thanks Donal!

This was so good, I've made it twice in two weeks!. I added a few things: turmeric to get that nice yellow color, thyme, and parmesan. I had some leftover ham after Thanksgiving and threw that in the second batch. Both were delicious!
Been holding onto this recipe for 3 years, then FINALLY made it for the family a month ago...and I have been making this weekly since!! Another example of veggie food that's tasty, hearty and nutritious that you don't have to be a veggie to love. I do one very similar but with garlic, some Indian spices and red lentils instead of peas. Spicy and warming that no-one, not even meat eaters like me, pull a face at.
My mother always had homemade bread coming out of the oven just as we got home. She made the most fabulous white bread, rye bread, Caraway rye bread, wheat bread and so on and so forth. Cut off a great big huge heel and slather it with butter.

A nutritionist told me to never peel ur carrots, just wash real well. He said 90% of the vitamin is in the skin. Just wash well. No need for the extra work of peeling.

I scrub my veg but I don't peel them. However, those peelings could make your veg stock! Since you blend everything anyway, if I did peel the veg and make stock with peelings, I'd finely mince the peels afterward and add them.into the soup. I am just gonna guess that frugality would require "no waste." But ye dinna tell us what was in the veg stock, ehether bought or homemade. But dammit, man, show the lusting world that brown bread, likely slathered with the world's best butter and just as likely all washed down with a pint or two of a red ale or brown stout. Just made this, and it’s the nuts!! First time making soup also, so I found a good recipe. I didn’t blend it completely so it still had a few lumps and didn’t add the cream and it was still delicious!! Thank you x

I’ve searched for a very long time trying to find a nice easy vegetable soup to make for my family. I’m not the best at following instructions but this was easy and the results were delicious 😋 Thank you Donal.
I’m going to make this today. I think I’ll add a bay leaf, a sprig of Thyme and a few pieces of Sage.
I stay in poland and it gets pretty cold. I made this thrice already in one month. Usually I make large batches of it and have it with dinner three days in a row. Only soup recipe that I have come across that's so simple to make and absolutely delicious filled with warmth ❤️❤️
More easy soups like this please! 💙🙏🏻🕊
I recently went after my dream and started my own cooking channel. I would love to share my easy and delicious recipes with you.👩🏻🍳🥰 Bless you!
@@KAITLYNTAYLOROFFICIAL I shall look you up thank you. 💙🙏🏻🕊
Thanks for giving an insight into your childhood 🥰🥰
This was so good, I've made it twice in two weeks!. I added a few things: turmeric to get that nice yellow color, thyme, and parmesan. I had some leftover ham after Thanksgiving and threw that in the second batch. Both were delicious!
That’s the beauty of soup! You can add some lovely options.🤗
Been holding onto this recipe for 3 years, then FINALLY made it for the family a month ago...and I have been making this weekly since!! While I had to make a few adjustments((non-dairy, so just added more plant butter, no parsnips at local stores, so replaced with Korean turnip)) and it is just sooo soooo good!! I need to make your bread recipe, but I have paired the soup with a no knead, artisan bread, and roasted chicken ...and 💋👌
Just...thank you ❤. This soup is literally the embodiment of a warm hug!!
Luscious soup! I love the way you present the recipe, straightforward & clear.
Best texture soup I've ever seen and ingredients,
Check the parsnip you use; the core can sometimes be woody and tough and will need to be trimmed out.
@@kathrynarabie9449 parsnips that have been mulched & held in the garden over the winter, then dug in the spring, are actually kind of earthy-sweet and quite tasty when briefly blanched then sauteed in a little butter. You should try them!
Best I've seen, parsnip and potatoes make it so creamy 😋
Yum! Id like to make this not only because it looks delicious and cozy, but also so I can say I prepared parsnips 😂 we don’t have many dishes with parsnips here in Texas! In fact, I would bet many Texas don’t even know what one looks like
Another example of veggie food that's tasty, hearty and nutritious that you don't have to be a veggie to love. I do one very similar but with garlic, some Indian spices and red lentils instead of peas. Spicy and warming that no-one, not even meat eaters like me, pull a face at.
On top of a great soup, magnificent personality & accent, he puts the the ingredients for us Americans in cups & ounces 😭😭
My mother always had homemade bread coming out of the oven just as we got home. She made the most fabulous white bread, rye bread, Caraway rye bread, wheat bread and so on and so forth. Cut off a great big huge heel and slather it with butter.
I eat a whole foods plant based diet and I am always looking for recipes to adapt. I made this without the butter and subbed almond milk for cream and it was divine! The veggies just sing in this soup! I can imagine with the dairy it is even more delightful. You should make this!
Try it with a thick coconut milk and some curry powder.)
Spectacular recipe that will definitely bring everyone to the table to enjoy🥣
My dad made chili every Sunday after church in the winter, we lived outside Denver, Colorado.
Lovely Vegetable Soup From Irish Grandma
*drools* ...makes plans to move to Ireland...*continues drooling*
Simple soups done well are the best thing in the World!
Divine recipe💕
Nom nom nom, winter vegetable soup is the best! And peas, my favorite vegetable, make every vegetable dish that much better.
If the Irish Vegetable Soup meets Lentils and Short-Grained Rice, it becomes Khichdi.
My mom used lentils (no rice though). We are Scots. 🏴
@@magpiesneedle2575 Equally good.
Nice and clean kitchen, make yummy foods…the soup Is indeed delicious !!!
Irish soup and Scotch broth are just 🤤🤤🤤🤤🤤
(I always leave a pile of peas though 🤣)
Favorit winter food when i grew up. Warm potato salat with sausages. Still loving it
I’d prefer it “‘unblitzed”
Me too......I think my mouth likes to feel the texture and taste of each each vegetable. Think with the blitz I would somehow feel short changed.
Yup. Blitzed food is for invalids or people with no teeth. 😉

Yes I agree, I love my soup, but the only ones I blitz are pumpkin or sweet potato. Greetings from 🇦🇺
Yep, I prefer vegetable soup where you can see more of the veggies..
I think I would like 50-50 ratio! Blitzed to chunky!
Irish recipes are all so great...I've got 2 cookbooks from Ireland, and have barley scratched the surface !!
A nutritionist told me to never peel ur carrots, just wash real well. He said 90% of the vitamin is in the skin. Just wash well. No need for the extra work of peeling.
100% sounds a bit High. But I know that it's healthier not to peel.
The nutritionist IS correct !!! I too do NOT peel my root vegetables either. Been cooking since i was 8 and now I’m in my 60’s. Blessings !!!
I was just peeling my root vegetables and thinking "why am I doing this?"
Same way with potatoes.
Especially since it all gets the blender treatment anyway.
I have never seen a soup recipe on youtube that comes as close to this 😳, he makes it sound so easy and practical,I gotta get get to the store today for sure
I'll be making it soon and thanking ye the whole time, or me name ain't Patrick James Edward O'_______ .
Slainte!!
Thank you for teaching me how to make a vegetable soup! May Allah reward you for this.
