Keep your immune system strong this flu season! It is commonly reported that over 75% of your immune system is in your gut. Turn carrots into a healthy and delicious, probiotic food that keeps your body in great flu-fighting condition.
Ginger carrots are a great way to introduce probiotic foods to your family since the carrots add a sweetness that counters the sour flavor of the fermenting process. Kids love these!
In this video, Carolyn shows you how simple it is to create a fermented food that your family will love!

To always have ginger in my house I slice the ginger, put the slices in a jar, pour sherry over it to cover and store in refrigerator. As I use the ginger I add more slices. If the sherry gets low add more sherry. I also use the sherry ginger liquid for stir fries, salad dressings, etc.

I have been very interested in recent months about fermenting. However, after watching only a couple of videos I was very concerned about the amount of salt being used. My husband loves sauerkraut and has been such a blessing to me in getting some gardens set up the last two years that I wanted to focus my options on preserving some special things I knew he would enjoy. However, he takes blood pressure meds and has been told to reduce his salt intake so now I’m wondering if this is such a good idea after all. I think you’re the first to actually mention the excessive salt taste and I appreciate it. I know this video is not a new post and you may not even see this comment but I just wanted to thank you for the video and for mentioning the ‘saltiness’. I will have to do some more research before I dive too deeply into this.

I've never done a ferment mainly because I'm not a huge fan of sour flavors but do a couple times a year. This is a recipe I would consider for my first ferment. Thank you

Thank you for describing the flavor as well as letting us know good ways to eat it. For those of us unfamiliar with fermented foods beyond sauerkraut that is very helpful.
Most you tubers who do food videos of any time will say the exact same thing when tasting the finished product; this tastes amazing. I would like to ban the word, “amazing” from most CZcams videos.

Hi I'm starting to eat fermented vegetables it helps a lot in my gut, before I used to eat oily food and some sweet foods but now I realized my health is not geeting any vit.
In this kind eating habit. Then I changed it to become pro biotic person. Thanks and God bless

I just started fermenting a couple months ago. My first batch was sliced carrots and cucumbers with garlic and chili pepper. It turned out great.
I just finished fermenting sliced carrots and ginger. Unfortunately, since I was experimenting (making it up) I used a whole ginger! Wow!
In my future batches, I am going to follow your recommendation and use the old ferment as a starter to reduce the salt required. Thanks!

+The African Homestead - I did the same thing years ago... I couldn’t even eat it - the ginger was so strong lol. Now I would know to put it over rice in small amounts... but that stuff can be powerful!
