The problem with the food service industry across the country is inconsistency & cutting corners. And just because you host Sunday dinner for the family or are the cookout champ in the family doesn't mean you need a restaurant.
I see it all the time. The key is to cook for total strangers or people who aren't family or friends and watch their reactions to your food. When people you don't know are telling you they would buy your food or constantly requesting it from you like a bag of exotic weed, it maybe time. But no, the cookout warrior on the weekends INVITING people over for FREE food is not that guy.
It's like hes going out of his way to not eat at any of the known good spots. I live in St. Louis and he hasn't been eating anything I've ever heard of before besides Crown Candy Kitchen.

Man you can take one look at the google pages for places like that and see the food is trash. If you insist on trying barbecue primarily-- Pappy's is the best ribs in STL, Bogart's a close second. A TON of people have been telling you to go to Sugarfire, the owner is a winner from Beat Bobby Flay and the food is really good there but it's more new age barbecue.

Brother Chimetime, let me fill you in on Big Mama's. When Belleville, Illinois was around 75% white a place called Big Mama's opened up to give US a place to get Black people BBQ in a white city. They then moved to the hood (East St. Louis) my hometown! To be honest they are nowhere good as a place called Sandy's that was around in the 80s/ 90s. They always mess up my food too. I've eaten there about five times. You are right a lot of places here depend on that sauce, but a lot of these other places depend on that liquid smoke. Avoid Bandanas for that reason. You can taste the liquid smoke.
Why do think that you need to look through a race lens at food? Black people BBQ? How about GOOD BBQ? I have eaten plenty of BBQ and all other foods cooked by white, black, and Mexican people in Texas. The color of the cook never matters. What does matter is whether or not the cook can cook great food. Please elaborate as to what Black people BBQ is?

From the way that video turned out, I would want to eat there myself. But I can truly say whoever is back there prepping the meats, especially the brisket, should be fired on the spot. The brisket I had was sliced 1/3 inch thick. It was juicy and seasoned well. The ribs were also seasoned well and was Fall Off The Bone. If I was a CZcamsr back then, I would have given them a 7.8/10. But seeing his video on them earlier today and watching how bad the quality went down on their food, I would have been a little bit more generous and gave them a 1.1/10!

Amen!!! Quality BBQ doesn't need sauce! The last brisket I ordered, which was lean instead of fatty, was so dry and flavorless that I ended up throwing it away. Unfortunately, the sides weren't any better; the mac and cheese, greens, and potato salad all followed suit. Even the banana pudding was a disappointment and ended up in the trash as well.

I'm from St. Louis, and for me bbq is in the backyard with friends and family, not a business. Bbq is fun and done because you love to. Not to make money doing it and that is why so many places go out of business was good before and then don't care anymore. Real good bbq places are hard to find. But real bbq is at home not a restaurant.
I lived in St Charles, on the other side of St Louis across the MO river as a traveling nurse in 2018. The best BBQ I found was at a place called Sugarfire Smoke House. I also went to Kansas City, where the real MO BBQ can be found. Great brisket and burnt ends, reach out if you go there.

I feel the same way about sauce. I like the taste of meat that has not been tainted by sauce. Therefore the meat has to be cooked right from the get-go
I'm from St. Louis, and for me bbq is in the backyard with friends and family, not a business. Bbq is fun and done because you love to. Not to make money doing it and that is why so many places go out of business was good before and then don't care anymore. Real good bbq places are hard to find. But real bbq is at home not a restaurant.

I lived in St Charles, on the other side of St Louis across the MO river as a traveling nurse in 2018. The best BBQ I found was at a place called Sugarfire Smoke House. I also went to Kansas City, where the real MO BBQ can be found. Great brisket and burnt ends, reach out if you go there.

If youre going to Illinois just go to Bills Toasty in Taylorville and get that famous burger w some cheese balls. 96 yr old diner…Never went out of business and the town has seen countless restaurants come and go. So you know its good shit.
