Good question! I think your suggestion is fair. Pelvis position should stay just about spot on the same. However, cockpit on gravel bike usually feels a little better a bit higher up and maybe closer - especially if using adventure style handlebars with more width.

No brand, but rather any bike that comes with a 1 1/8" steerer and threadless stem.
It doesn't make any sense. The more you spend on a high-end bike, the less amount of adjustability there is.
