The recipe is amazing but I made some slight changes with my second batch. I substituted pandan extract for vanilla extract. Also I cooked it in a water bath. This gave the end product an even more classic mochi texture.

Can I use normal gluten rice flour?

Wow this looks so much like bánh khoai mì... From the thumbnail I was sure it was a recipe for that!

Lol yes. Many people have been saying that. It is quite similar. I think Banh Khoai Mi will be my next recipe.

Hi! I did the same exact thing and the pan is the same size but after baking it, it deflated very quickly and it's so flat...before it was as tall/high as yours. Do you think you know how I messed up? Thank you! I appreciate your recipe!

Hi! It does rise while baking and then deflate about half an inch, which is normal. If it's deflating too much (possibly from pulling it out too fast from the hot oven), try turning off the heat and let it sit in the oven for a tad bit longer before pulling out.

Thank you for the quick response!@@v2pham I'm also thinking if I use coconut cream in the future but I will def. turn off the heat and let it rest there for awhile. It still tasted delicious, though! Thank you!
