Effortless Cheesecake Brownies

  • This cheesecake brownie recipe is simple and effortless. Enjoy a rich chocolate smooth brownie base, topped with an ultra creamy cheesecake layer.
    Ingredients:
    Brownie layer:
    o 1 cup unsalted butter
    o 1 ¼ cup chocolate chips
    o ½ cup cocoa powder
    o 1 cup flour
    o 1 cup granulated sugar (for sugar free use Stevia baking sugar)
    o 2 eggs + 1 yolk
    o 2 teaspoons instant espresso or coffee
    o 2 tablespoons hot water
    o ½ cup brown sugar (for sugar free use Truvia brown sugar)
    o ½ teaspoon salt
    o 1 tablespoon vanilla extract
    Cheesecake layer:
    o 16 oz cream cheese (at room temperature)
    o 2 teaspoons vanilla
    o 2 eggs
    o ¼ cup sugar + 1 tablespoon
    Instructions:
    1. Preheat oven to 350 degrees.
    2. Combine flour, cocoa powder, and salt in a bowl. Mix until fully combined and set aside for use later.
    3. Add butter to a microwave safe bowl, heat in 30 second increments until butter is completely melted. Immediately add chocolate chips to the hot butter and whisk until combined. Add melted chocolate to a large bowl and add in granulated and brown sugar. Using a hand mixer, mix until smooth. Add in eggs and egg yolk and mix until combined. Pour in dry mixture mix until incorporated. Combine instant espresso with hot water, dissolve and add to brownie batter. Lastly add in vanilla extract mix until combined and smooth.
    4. Pour 80% of the brownie batter into a well-oiled baking pan. Set aside and start cheesecake layer. Set 20% of the batter aside.
    5. Add cream cheese to a bowl and use mixer to smooth. Add in sugar and mix until smooth. Pour in eggs and mix to combine. Finally add in vanilla extract mix until smooth.
    6. Pour cheesecake layer on top brownie layer and smooth. Using the remaining brownie batter spoon 4-5 dollops on top. Using s toothpick swirl the brownie batter through the cheesecake.
    7. Bake for 30-35 minutes at 350 degrees, or an inserted toothpick comes out clean. For best results allow brownies to cool for 30 minutes, then refrigerate for another 35-45 minutes. Remove from pan slice and enjoy.
