... NOTHIN!!!!!!
Squid might sound intimidating if you've never cooked it before, but my squid garden medley is incredibly delicious and easy to make. PLUS I'm gonna show you how to clean and gut your own squid so you can buy it cheaper at the supersmarkets. On today's episode we're using my very own special edition Roccbox from Gozney. I've always said it... but you know what, I'll say it again. The Gozney Roccbox is an awesome restaurant-grade portable pizza oven. Yes, it cooks incredible pizza. 🦑 INGREDIENTS:
- North Atlantic Squid, cleaned and sliced into rings
(hot tip: Save some $$$, buy it "Dirty" and peel / de-gut it yourself )
- Baby Tomatoes | x 1 small bushel
- Celery Leaves | x 1 handful
- Garlic | x 3 cloves
- Onions | x 2, red/yellow/white
- Olive Oil and Buttah
- Optional: a little bit of Thai chili or other spicy pep
🦑 HERBS:
- Purple Basil
- Green Basil
- Pedilla
- Lemon Verbena
- Sage ( One Leaf )
Cook hot (650-700 degrees F) and fast on a cast iron in your Gozney! You could also use a regular ol oven, or even on stove top. High heat. Follow your heart. Listen to the sizzle.

growing up we didn't have much, so we sometimes would get squid from the fish bait section and do something very close to this - always thankful for calamari.

This episode was such a love letter to onions that you should do a collab with dixondale farms. The best place to get onion plants if you don't start them from seed yourself.
Love a quick recipe with tons of variety and fun flavors in it. I feel like you could substitute a variety of proteins in a pinch as well.

I've been watching your shit for a while, since not long after It's alive began and I do really appreciate how you show what is happening. I am a chef but in a country that isn't very culinary inclined, its all pubs. It is getting better but its still difficult to find somewhere nice to work. To LEARN. So thanks :)
Not saying that ALL pubs are bad but a lot of my cooking at these pubs has chef mike. So yea, I worked for a wonderful polish couple and they really escalated my idea of how to cook. I would love to learn about our indigenous maori food but its tough. :)
