I work in harvesting and processing of wild-growing kelp (another species). It's really cool to get an insight into what the farmers are doing. I know there are many attempts at farming and not really know knowing what to do with the yield, but this looks interesting.
My favorites way to eat swordfish is very rare, thick and with all the skin on the grill.
I'm going to do that marinade and seaweed wrap, but on chicken thighs. Unwrap and crisp the skin to finish.
