My Mom's Paratha - A desi breakfast

  • I learnt all of this from my mother. She learnt how to make this paratha from her mother. It's a family recipe! If youre desi you've probably had something similar. A paratha is a south asian flat bread that is basically a roti except you add ghee (clarified butter) to it when cooking it. There are so many variations of it. You don't need to layer it, but I do because my mom makes it like this and it gives you a really crispy layered delicious paratha.
    Shout out to our housemaid Haseena in the village in Pakistan who's been working at our family's house for as long as I can remember, she taught me how to knead the dough.
    Paratha
    217g Atta flour (1.5 cup)
    170g water (3/4 cup)
    1/4 Tsp Salt
    Ghee (clarified butter)
    Omelet
    2/3 Eggs
    2 pinches of salt
    Half a teaspoon to a teaspoon of Red Chilli powder, depending on how spicy you want it (laal mirch)
    A quarter diced onion
    a tablespoon of chopped cilantro (dhaniya)

    this is absolutely nostalgic! we make square parathas too. A must in majority Pakistani homes and goes amazing with fresh vegetable omelette

    Added bonus tip. For the dough use boiling hot water in the beginning. This lets the moisture go deep into the wheat. You can make this dough with al purpose flour but atta (found in Walmart south Asian section) or Indian/Pak stores like patel in the states. Another word for atta is durum wheat.

    I've only had these from the frozen section (those are still delicious though ngl), I think I will try making them from scratch though, looks so good

      Sounds good but the frozen ones are absolutely nothing like the homemade unfortunately. Please try this recipe you wil love it. Just make sure u cook it well and don't eat it raw. 😉

    Abt the dough, in our family we just add salt to the flour itself eye balling the amount and then make a well and make the dough with all the flour at the same time and put it all together and let it be for abt 5 mins and then knead it for 2 minutes

    You can make a sweet paratha too by modifying the recipe by sprinkling some sugar after adding ghee and before folding it in a square. It tastes amazing with tea :)

    I love Paratha and now I must try to make. I had family from India but never got the chance to find out how they made them in my younger days, I feel guilty for that, now is the time to rectify it.

    Hi how many pharatha can you make with the quantity of ingredients mentioned? I am not sure one pharatha will fill my tummy 😶

      you can make 2 medium sized parathay with some left over dough! or 2 large ones 😅 total weight of the dough is about 370g and the paratha I made weighed 150g
