Out of these I’ve only watched Handplates
All of them are different timelines so maybe he just gets his blue eye diffrently every time

Sans always had Blue eyes but when W.D. Gaster was experimenting on Sans but accidentally made the right side of Sans’ skull explode. Gaster has to nurse Sans back to health quickly before he got Papyrus involved to help.
That is the reason why Sans only has one blue eye.
Fun Fact: Both of Papyrus’ eyes glow but in Disbelief he is filled with sorrow and hatred at the same time.
