I'm really inspired how Southern ladies just use regular utensils while cooking. It makes me feel more confident in my cooking. I focus more on best results rather than perfectionism during prep.
Regular utensils? Most southerners were taught by African Americans to cook. This particular recipe involved one glass serving bowl and a spoon, so I’m not sure what your point is. This particular recipe is a late 20th century favorite made by most home cooks from Virginia through east Texas. I am so glad Mrs. Leary has produced these videos and her book so we can recreate all these favorites. The main difference between soul food and white plantation style food is the bones and scrap pieces of seasoning meat are removed from the vegetables before serving, and sweet potatoes are best put through a food mill to remove the springiness. Highly recommend “Cooking in Other Women’s Kitchens: Domestic Workers in the South,1865-1960” (The John Hope Franklin Series in African American History and Culture) Paperback - Illustrated, February 1, 2010, Rebecca Sharpless (Author). All nice southern ladies can relate.
I notice people using serving and dinnerware spoons for food prep also. Dont understand why you dont invest in more professional knives and spoons either. Not Meme in particular.
I used to use regular ole utensils and dull knives to cook. I can certainly say the day I used proper knives, prepping became much quicker and easier. I found the KitchenAid mixer was a Godsend too

Hi Diane. I am from Texas and we've always made 7 layer salad like this.... Lettuce, green onions, green peas, bolied eggs, bacon , cheese and finally homemade ranch dressing. We make it in a 9x13 dish and leave it layered for serving. It's good like that as well. Try it like that

Me too, in Tennessee, no added sugar and use bottled ranch dressing.
I’m guessing tomatoes, carrots, and cucumbers could also work in this dish?

We call this “7-layer salad,” and a neighbor brought one over when my mother died many years ago. At first, I thought it was an unusual item to bring by (not that I wasn’t oh so grateful!). What a wonderful thing to have in the fridge! It was large, kept well & everyone loved it. I’ve made it my go-to “bereavement dish” to deliver.
We call it 7 layer salad too in my neck of the woods, it’s always a favorite ❤
Great idea! I usually send a tri-colored rotini Italian pasta salad with lots of veggies as well as pepperoni and cheese and some cut up fresh fruit so the family can grab something nutritious and light very easily. I think this layered green salad might be even nicer to share, as there are more veggies, would be gentle on tender tummies and would go along with almost any main dish another might bring (ie: meatloaf, lasagna, roast chicken, etc)
I love your cookbook! And I love your videos! You and KK are the best! The little comments you make off the cuff, just make them so precious! Other CZcamsrs are stiff and rehearsed, or too long with too much detail. But yours are perfect! The Lord is definitely with you, and you are bringing so much joy and laughter to all of us while all the time teaching us to cook! You're my favorite by far!

I haven’t had this salad in years, but we might just make it ahead of time for Thanksgiving this year. It is such a good one!
And today I followed along with you for the first time with your cookbook! Received it in the mail last week and have gone through it, read a lot of recipes I was already familiar with, some entirely new! I‘ve heard about Pineapple Casserole for years, but have never made it. That’s changing tonight! We’re having sliced baked ham, green beans and new potatoes, and Pineapple Casserole! Hope my family enjoys it as much as I think they will, because I’m planning on making it again for Thanksgiving dinner!

Like others, here in Ohio we call this "7 later salad". My mom used to make it and I loved it, but haven't had it since she's gone now. In her honor I'm going to make it again. Her birthday was recent: 10/29 . I still miss her so much.

This recipe reminds me when I was little girl in the 1960's and my mom would had her church ladies over for their annual meeting . They would have a fancy lunch after the meeting and this salad was on the menu. Wow your cooking reminds me of my mom and her friends who have all passed. Lady Bug! This sounds silly but I did not know to MIX it up before serving. So mine was dry in places! I’ve made this a couple of times and just didn’t get that delicious dressing on every serving! I wasn’t going to make it ever again… until NOW… MeMe. I will give it another try!

This lady is a true southern cook! Good food doesn’t have to be a lot of work or contain gourmet ingredients. Me Me’s cooking reminds me of my mother and grandmother’s. Ever so good and I usually have the ingredients on hand, an added plus.

Ms. Diane, this was a family favorite while I was growing up. My Dad used to make it, and he’s from New Jersey. 😆It was always a summer dinner. He’d use real bacon, too.

For a little different taste, we add a little (1 TBS or so) of red wine vinegar to your mayo and sugar. Makes the dressing a little sweet/tangy.

I've made this and added chopped ham and turkey to make a meal. I also add a dash of paprika and garlic powder to my mayo, as well as the sugar. Love your videos. 😊

I have always made mine in a 9x13, and we just cut big squares, I never knew how they served it in these big bowls, thank you for showing the end result

When I’ve made it, I always had to transport somewhere. I used my large Tupperware round cake carrier upside down. Refrigerate overnight and at the party remove the lid. Plenty deep enough for mixing. Sometimes I would add cooked elbow macaroni. Always a hit! 😋
I bought all the ingredients for seafood bisque and will be having it soon! The layered salad looks good, too!

Today I received my copy of your cookbook, hooray! I love watching you and am a long time cook. My family loves “pea salad”.
15 oz le surer peas
4-5 diced green onions
I/2 cup (or more) small cubes sharp cheddar cheese ( pea sized)
1-2 to 3-4 cup mayo
Salt to taste
Mix all and refrigerated over night
