  • Enjoy Detroit style pizza in a convenient single serve size. It has a deep dish focaccia like crust that is crispy on the outside and chewy on the inside - so good!
    Ingredients:
    Dough:
    1/4 cup warm water (105-115 degrees F)
    1/2 tsp active dry yeast
1/2 cup all purpose flour or bread flour
    1/4 tsp salt
    3 tsp olive oil, divided.
    Toppings:
    Pizza Sauce (see recipe below)
    Pepperoni 5-6 slices.
    Mozzarella Cheese, about 1 cup
Add yeast to warm water and allow to sit for 10 minutes until it is bubbly.
In a bowl or the bowl of a stand mixer with the dough hook attachment add yeast mixture to flour, salt and 1 tsp olive oil.
Knead until soft and smooth. Tough will be slightly tacky but not sticky.
Cover dough and allow to rise until double (30-45 minutes)
Take dough and form it into a circle to fit your pan. I use a 6 inch cake pan.
Add a couple teaspoons of olive oil to pan and then add tough. Cover and let rise until double, another 30-40 minutes.
Once dough is doubled, take your fingers to dimple the dough.
Add a layer of pepperoni, then the cheese.
Add sauce in 3 lines down the top of the cheese.
Bake in a 500 degree F oven with the rack in it's lowest position.
Bake for 10-12 minutes or until the crust is caramelized around the edges and the cheese is bubbly and lightly golden brown.
    Pizza Sauce:
    1/2 Tbsp olive oil
    1/2 tsp garlic
    1/2 cup crushed tomatoes
    1/2 tsp sugar
    1/4 tsp Italian seasoning.
    Directions
Add olive oil and garlic to a small sauce pan and saute for 1-2 minutes.
Add in sauce and other ingredients and simmer for 10 minutes, stir occasionally. Cool

Welcome to my Kitchen! I'm Leigh Anne, the mother of four adult children and my husband and I are now empty nesters. I know the challenges of learning to cook for just the 2 of you, it feels like learning to cook all over again! After the kids left home, I found that I stopped making a lot of our family's favorite dishes and treats because those recipes just made too much food and I was tempted to eat too much!
On this channel, I invite you into my kitchen each week where we learn how to make small batch recipes with big taste. You can still enjoy all those family favorite recipes, just less of it!I look forward to meeting you in the kitchen each week with a new recipe and video.

You can also use just one of the beaters for your hand mixer when beating things in a small bowl. Just make sure you use the beater with the drive handle.

Thank you for this! I love a thick crust.❤ This crust would also make a nice garlic bread for 2 using a mayo, garlic parm, motz mixture on top. But, I think I would do my pizza and garlic bread both in my cast iron pans. If not that, then a dark round cake pan.

That's a great idea - sounds delish!! A cast iron pan would work great

i always used end of a wooden spoon and stir fast to give it air .. but not too fast to sling flour everywhere ..lololl.. it works just like a paddle on stand mixer !

Hi Leigh. I hope all is well with you and yours. Do you have a small batch fudge receipe? It's just me this Valentines. And I sure would like to have a few pieces. I tried to make some myself using my standard fudge receipe. I tried making it smaller. I ended up with yuky messes each and every time. I didn't want to make an entire pan just for one. If not I'll call my Grandsons and they can devour the rest. By the way your small batch cakes receipes are SURPERB! 😊🙇‍♀️

Hey, I'm wondering if I could use cast iron to bake this crust in?

Can you suggest a 6 inch pan that withstands 500 degree heat? I am planning to use a Wilton 6” aluminum cake pan but label on pan says 450 degrees or less.

I use the fat daddio cake pans and it worked fine at that heat, you could also use a small cast iron pan.
