How about pin bones ? the main big bones are the easy part, the small pin bones are the one keeping me away ordering whole fish at restaurants!
There are usually 4-5 small bons left inside and you can learn where they are after a few tries! What I do is I slide the fork slitely pushing the fillets and you can sense where they are hinding@ There is never 100% guarantee though!

Alex, to be hones I have never filleted those fishes! Those are sweet water fishes! I have never served them!
