I grew up in NC in New Bern. I remember my grandmother making shad roe...loved it. I gotta have some sent here to NV!

Shad season is here on the West Coast, I just caught my first a couple days ago. I heard the fish isn't so great, but this roe recipe looks great.
The meat is good, but EXTREMELY bony. Great for canning, though. Go get em'!

Why didnt put a lid on it? if you knew they're gonna pop. Im planing on doing it inside and i was wondering about so much poping if i put a frying pan lid on it.
I use a splatter guard inside. I just wanted to show the popping in the video😄
I like your method with the bacon but I would of cooked them first because if crowd the pan it brings the temperature of the oil down. Overall, good job
