Original Pav Bhaji Recipe (from a stall at Juhu Beach)

  • This video shows how "Pav Bhaji", a very popular street food in India, is made. It has been shot at midnight at one of the food stalls (called "Chandan Laxmi Pav Bhaji and Fast Food") at Juhu Chowpatty Beach (the most famous among places selling Pav Bhaji) in Mumbai, India. Juhu is a suburb in Mumbai famous for its beach, the food stalls, Prithvi Theatre and ISKCon temple and also because it is home to some of the biggest Bollywood stars like Amitabh Bachchan, Hrithik Roshan and Aishwarya Rai. The video has no actual footage of the beach or the sea since it was dark and was raining heavily...had to save my camera! This is a first in a series of videos on Juhu which is a hot favourite destination with every tourist visiting Mumbai.

      @@apu8332 1. Place diced capsicum on a heated Tawa and add little water to allow it to soften.
      2. Add chopped tomatoes and boiled and mashed potatoes.
      3. Now add boiled grean peas.
      4. Sprinkle some red chilli powder.
      5. Add a big spoon of ginger garlic paste.
      6. Add a pinch of turmeric powder.
      7. Put some water to allow the vegetables to become tender.
      8. Add butter and stir for a while.
      9. Now mash all the vegetables together and let it turn completely mushy and until no vegetables are recognizable.
      10. Add some water and bring it to a boil.
      11. Sprinkle pav bhaji masala.
      12. Add salt as per taste and chopped coriander leaves.
      13. Keep stirring and mashing till the bhaji thickens and the oil separates.
      14. Now, keep this aside and on the plain tawa add some butter.
      15. Add chopped onions, ginger garlic paste, a pinch of red chilli powder, some pav bhaji masala, kasuri methi, asafoetida, chopped coriander leaves and some lemon juice.
      16. You may also add some colour to get that red tinge.
      17. Once you've mixed this well, add your mashed vegetable mixture that was separated and kept aside.
      18. Now, mix everything together and keep mashing until you get a thick mixture.
      19. The bhaji is ready and now let's prepare the masala for the pav.
      20. Heat some butter, add coriander leaves, red chilli powder and some pav bhaji masala.
      21. Now split the pav horizontally and coat the masala on the pav.
      22. Your dish is ready to be served.
      23. Garnish with some coriander leaves, onions and lemon wedge.

    - Heat some butter, red chilly powder, pav bhaji masala and coriandar leaves
    - Add horizontally split Pav and coat in all sides of this masala

    Vikas, I always wanted to know how they make pav bhaji on roadside. I used to eat regularly in India. Now I live in the US and no Indian restaurant makes good pav bhaji here. I watched this video early this week and made the bhaji exactly like you have shown in the video. The bhaji turned out to be exactly like that in India. I am on cloud nine.     Great recipe, thanks for sharing. As per what I could understand
    2 large/ 3 small capcicum
    ¼ cup water (to soften the capcicum)
    2 tomatoes
    2 large/ 3 med boiled potatoes
    ¼ cup green peas
    1 tsp red chilli powder
    1 tbsp ginger garlic paste
    1 tsp turmeric powder
    ½ cup water
    1 tbsp butter
    (mix and mash)
    ½ cup water- let it boil a little
    1 tbsp pav bhaji masala
    Salt
    2tbsp coriander
    (Mash and stir till oil separates)
    1 tbsp butter
    1 small onion
    ¼ tsp ginger garlic
    Pinch of red chilli powder
    ½ tsp pav bhaji masala
    1 tsp kasuri methi
    ¼ tsp hing
    1 tbsp chopped coriander
    ½ lemon slice juice
    (Mix both mixtures. Mash and mix)
    For pav-
    1tbsp butter
    A pinch of red chilli
    A pinch of pav bhaji masala
    Some finely chopped coriander
    Mix and roast the pav

    Thank you for posting, Vikas. However, the secret is in the pav Bhaji-Massala - and that sadly wasn't revealed. Using a large tawa is a nice show, and it quickens preparation of large number of portions, such as on Juhu beach in Mumbai. I used a roti tawa for pav, and a wok for the bhaji. It took me less than half an hour (including cleaning the vegetables and cooking potatoes in pressure cooker) to prepare 5 portions for breakfast. We won't eat it too often, because of the extensive use of butter.

    Thank you dear for sharing this recipe. I bunked my office for half day, got all ingredients and cooked and you know, came out just like street pav bhaji in India!!
    I have seen many recipes in the books on websites etc. but not like street stalls and this is THE ONE!

    1 green bell pepper sauté in water to soften. 2 chopped tomatoes, 2 boiled potatoes mashed with your hand, 1 spoon chili powder, 1 large spoon ginger/garlic paste, 1 Cup peas, 1/2 tsp turmeric powder. Saute again with more water to become tender - then add 2 Tbs butter and mash the whole mixture well. Bring to boil and add salt and ????? Marsala ( a special blend of seasoning). Cook until oil separates.
    Now add onions, ginger/garlic paste, 1/3 C butter, pinch of red chili powder, 1 Tbsp Bhaji masala, 2 Tbsp dried fenugreek leaves, pinch Hing, lemon juice.

      Pav Bhaji Masala powder recipe:
      Dry roast these spices & when cooled - grind to a powder.
      2 Small black cardamoms
      4 Tbsp coriander seeds
      2 Tbsp cumin seeds
      2 tsp black peppercorns
      1 Tbsp fennel seeds
      5 red dry chills
      2 inch cinnamon stick
      1 Tbsp amchur powder

    thank you very very very much Vikas and also Murari for explaining so explicitly. I tried it and it came out exactly like the stall pavbhaji.     it was great to see how the man on the ground makes the dish. Was a bit disappointed to know they put very few vegetables-- peas, potato, very little capsicum. Yet they dish out such delicious stuff. This is a brilliant idea of going to the stall instead of having it in a posh kitchen.

    Notice the background score of "dheere dheere se meri zindagi me aana" , "yaara sili sili" and 'dum maaro dum' probably on an ancient radio or some loud stereo! And add to that this zesty Pav Bhaji and thats what makes it so special! Love Mumbai!

    I tried this at home, gawdddd can't describe how well it was.. For 3 three days I was eating it :) and I never eat pav bhaji for that long! You rock!! Thanks Vikas for posting the video, and a great ton of thanks to these cooks who are never praised, but are so well worthy of it!!

    I have never found any good pav bhaji in any restaurant here in US. Then I tried the exact same recipe ....it came out so good.....Now I m making it every week..lol

    This is the biggest advantage of being in Mumbai.The best pav bhaji in the whole of Mumbai can be found nowhere else other than Juhu Beach.I've eaten it so many times....and I just can't forget its taste!!!!Simply love it!Big and famous chefs can't to the wonders of pav bhaji that these people outside Juhu Beach can do!!

    Amazing reciepe...soo easy and quick. Had pav bhajii after 4 yrs. Same authentic taste as back in india
