As a balikbayan, i never actively search for these restaurants when i go home, it's always the street foods and cheap eats that I crave. I don't go out of my way to look for a fine dining experience just because i never thought about these types of food. But with so many channels featuring fine dining, I gotta say, I have to go back and have a look.

Inato in bisaya means simple, nothing fancy, as according only to the host style and not with so much extravagant prep. It is said to a visitor/s so that they will feel welcome and not underwhelmed as to what many visitor would thought that every household must prep fancy ones so it will be pleasing.

Alvin gotta know they need the San Sebastián Spanish Chef , to spark any kind of fine dining, because they recently took over fine dining from the French , Chef Chels teacher Ferran of El Bulli is considered the greatest fine dining chef ever ,, the greatest French chef Joel Robuchon passed the torch to the Spaniard announcing as the best chef in the world not Alain Ducasse or Thomas Keller , also. Despite that or Toyo Eatery earning a Michelin star or more fine dining expensive Filipino restaurants opening, Filipinos especially Pampangans will never acknowledge them and Pampangan food will always be the best in Philippines ( best in south east. Asia or Asia or best in the world ? ) you want that kind of attitude , that’s the same attitude San Sebastián Spain had against Barcelona Roses El Bulli and it’s reputation as the worlds best restaurants , but San Sebastián wasn’t hearing it they still placed their Michelin 3 star restaurants as the best in Spain Arzak Akelarre, Martin Bersategui , and next generation Mugaritz

"I am Filipino but I realized, have I really eaten Filipino Food?"
Then goes to fine dining places? Lol. That's an approximation of Filipino food. From a certain pov, charitably some might even say an "elevation" of Filipino food. But that's NOT reconnecting to one's roots. That's reconnecting to other people's bougiefied interpretation of one's roots.
