Dan! I’m from South Louisiana and have been making gumbos and stews for 40 years! Gumbos are like personalities…there are all different types. Yours looks delicious! A little tip on the okra, just cook it down a little with a little oil before you put it into the gumbo. That will take out all the slime! Great video and you keep being Dan! Have a Dantastic day!

man from someone who isnt from the south but had gumbo a couple times I really need to make this myself. gumbo is so underrated here and I'm craving it now. Great work as always Dan, looks delicious!!!!

A tip I learned from another chef is take your flower as spread it out on a pan or oven safe dish and bake it in the oven til it’s a toasty brown color then make the roux gives it a great flavor

I’m many generations on the Gulf coast. We all sauté our okra for a few minutes in a pan alone then add to gumbo and that keeps your gumbo from slimey a few days

FWIW if you over salt your soup/stock/broth/etc you can add raw peeled potatoes sliced hamburger, not hot dog, and some water. for whatever reason as you cook them the potatoes suck up some of the salt

Cook the andouille separately and st aside. Save the rendered fat and add the oil to it for the roux. Adds great flavor.
