    I used to manage a grocery store for a local chain. The Hispanic customers would buy a sirloin roast and have the meat department thinly sliced it for their carne asada meat. One customer invited me over for lunch for a gathering at her house. It was somebody's birthday. The tacos tasted very good. They used freshly made corn tortillas which just pushes it over the top.

    I understand most of it. After all, tacos are both "life," and "love." What confuses me is how you are supposed to "share" a dozen tacos. lol

    Carne Asada is my favorite. I always get some at this Mexican Restaurant called Taco Express. Glad you provided a recipe. I can save money can cook these at home.

    I used to use a stainless steel pan (not non-stick) for searing but I have recently acquired a Le Creuset grill pan so that's my choice from now on. There is nothing like cast iron for even heating and a super hot surface. I do not expose non-stick pans to heat above a medium flame.

    Love the marinade, the meticulous Asian side comes out in the careful preparation. Similar recipe I have is mix wet and dry ingredients into a bowl, throw a handful of carne into a bigger bowl, add some marinade, mix with hands, alternate ingredients and mix until incorporated into the bowl. Simpler even is tajin or similar seasoning with tampico generously added to a large bowl of trimmed flap meat and letting it sit while the fire on the grill gets ready. Maybe add a splash of beer to the meat from a guest I ask to grab me a cold one while they walk by the bowl.
    Edit : jalapenos and onions on the grill, tortillas made hot before the fire is even lit.

    What? No guacamole? Obviously, I must eat it California style. We also add some Corona or Dos XX beer to the marinade. It will mix easier and coats really well if you just toss everything (including the juiced fruit) into a ziplock bag (or a larger, double bag system for more meat), close it and use your hand to spread the marinade. Delicious.

    In my opinion ribeye is to tender for carne asada. It just doesn't have that bite that you get from skirt, flank or even thin sirloin.

    Carne Asada = my favorite! Never much a fan of pork or chicken tacos...just curious, does your husband have a problem w/ cilantros? I noticed a lotta Korean people can't eat cilantros when I first got here. How the heck can you eat SE Asian foods or Mexican foods? Missing out!

      FYI I'm in the meat distribution business, if you use skirt meat, please use Inside skirt aka Hanging Tender aka Hanger Steak aka Thick Skirt (Australians and New Zealand folks call it his) aka 토시살, much more tender than the outside skirt and much smoother texture BTW it was also called Butcher's Cut (Europe) cuz the butchers back in the day wouldn't sell the inside skirt to public so they can keep it for themselves. ^^

    I live in Texas and the Tex Mex Carne Asada is > beef tip and gravy in a soft tortilla. Go out west and thing get so mixed up!

      No I didn't, but that would have been the way to go for better slices. To be honest I wanted tacos and the only beef in the fridge was one ribeye steak that was thawed already so I decided to film what I was doing. 😊

      I used ribeye steak and sliced it thinly. A good flank or skirt steak probably works better. I just wanted to film the marinade and only had one steak in the fridge so I used it. 😊
