Back in '74 I got mine to 90 on the old 7-mile bridge and got spooked.

An expansion chamber may help instead of the OEM muffler

I'm not 100% sure how it is on yours but on my own bike you tighten the axle first and the clamp bolts afterwards. Just because I just noticed it and was a bit puzzled about it...

this bike was lovingly known in 1974 as the MT "eli-snore" compared to the very fast CR elsinore that was winning races back then.
the CR was lighter with a cromoly frame,aluminum parts ,bigger carb and a very loud racing pipe.... but the MT could go all day at high way speeds with out burning up and has a higher top speed with a smaller 44 tooth rear sprocket.

Nope..Flat all the way to the red line. The MT 125 was peaky but that wore off after about 1,000 miles. Honda really messed up with the horsepower on the MT series. There wasn't any.

I can't tell but if that has knobbys on it that got to effect the speed.

if the bolt or nut does not turn before the click or beep when using a torque wrench its over torqued

Considering a Grom can get to about 55-60 with barely 10bhp, this should probably be able to break 80mph? GPS speed, not indicated speed ;)
But who knows how much power the engine still makes.
Oil pump injection AND premix? Definately overkill. I'm surprised your plug didn't foul up. You could just have taken out the oil tank and the pump to save weight. Those bikes were pretty gutless compared to the other Japanese 250's of the time. I could get 75 mp/h out of my Kawasaki 90 street bike. If you still have the bike, put a CR 250 top end on it. Bolt on parts and lots more horsepower. You're running on premix anyway so why not ? It's a gorgeous bike and it deserves more horses !!! ps... ( CR 250 expansion chamber ) :)))
Rebuild the whole motor, oversize the cylinder a little and jet it a little more fat 🤙
Have you ever set your float level?
Have you tried a run now with new plug and the injector pump hooked back up again?
Don't feel too bad about that 0-60...
The only way to get an accurate measure is on a rolling road.
Curious what was the total cost of this build.?
take the pump off run 40:1 amsoil....pre mix it
and put a good pipe on it
just got one converted to cr.....mine is faster than that
