A pizzeria with a trendy style but with a classic Neapolitan pizza with dough leavened for 48 hours, 70% hydration and great attention in the choice of raw materials.     Its hard enough using a wood burning oven, why not make everything turn at the same time and complicate our lives even more LOL These guys rock!
    For those who like that big puffy crust, if you notice these guys stretch the pizza smooth side down.
    Besides higher hydration when having the sticky side up and you put the toppings, because there is more moisture it helps with the spring rise in the oven and gives you a bigger crust.
    Try it next time and you will see :)
    Problem with high hydration on a high temperature is you get a really soft crust but 0 crunch.
    You can see how airy that dough is on the last few frames of the video!

    One suggestion: Can you make more videos on how they make the pizza dough (type of flour, yeast, honey/sugar, as well as how they make their tomato sauce, what kinds of cheese, etc.? That would help all of us that can't get to Italy very often. Thanks!

      First off, I don't think there's any sugar or honey in it. We're not in the US. I can't comment on the flour but you'll most likely get good results with the Caputo Nuvola Super or Rosso. Cheese looks like a Fior Di Latte, perhaps Fior De Agerola? Maybe Ambrosia? I'd send an email directly to the pizzeria and ask.

      Actually some Italian pizzerias add some honey to give the yeast some sugar to eat to make the dough more airy. It’s not an ‘American thing’. Check out some other pizzerias around Naples and Rome and you’ll see.

      vous avez raison, mais à mon avis, la raison est simplement que le loyer dans le centre de Rome coûte certainement beaucoup plus cher, Naples est notoirement moins cher. Merci pour l'écriture

      @@Romafood je suis pizzaiolo, j ai vécu 6 mois a Naples, j étais formé et travaillé a Naples, les pizzas tourné de 5€ à 11€ maximum, et Rome n est pas paris, il faut pas abuser, depuis que la pizza fait partie de l UNESCO, c est devenu un produit de luxe
